Broccoli Salad V

Wonderful flavors and texture!! My husband didn't think he would like it when he saw it but loved it! I made some minor substitutions, but also, I steamed the broccoli for about a minute then put it in an ice bath. It was still very crunchy but not entirely raw--I'm not a huge fan of raw broccoli. I used a fat-free poppy seed dressing with white wine vinegar, and used black seedless grapes and dried cranberries. I also used turkey bacon. Was delicious!!!

Easy Cheesy Skillet Chicken

I love this recipe for the ease of it. It's tasty and makes a good amount of sauce to go with pasta or rice. My husband and 2 year old loved it.

Slow Cooker Scalloped Potatoes with Ham

I made this for Easter too. It was very good! I used 2 cups of cheese and replaced the water with nonfat milk. I also omitted the ham since we had ham as part of the meal. The best part of this is using the slow cooker so I didn't have to turn the oven on--a huge plus when living in Phoenix!

Slow-Cooker Pepper Steak

Very tasty! I made it almost exactly as stated, except I added the green peppers in the last 2 hrs. Definitely one to make regularly. The beef was so tender!

Classic American-Style Potato Salad

I made this exactly as written. I was skeptical about the sweet pickles, but man, was the whole thing great! Even my hubby who is particular about potato salad raved. I've tried several potato salad recipes, but this is my new go to recipe. Thanks!

Cranberry Nut Bread II

Yum! Made it as written--delicious--tastes like a fancy bread you would get at a coffee shop! I doubled the recipe and used one 12 oz bag of cranberries for the whole thing as suggested by another reviewer. I put the cranberries in whole. Super easy to make a double batch then freeze one. Thank you!

Burger or Hot Dog Buns

Really good, especially right out of the oven. I didn't have instant yeast so I used dry active yeast --2 3/4 tsp and I proofed the yeast first then mixed everything together and did 2 rises. I made hot dog buns--they weren't pretty, but with practice, I'm sure they'll get better. These can be used also as sandwich rolls. Thanks!

Spaghetti Carbonara II

Wonderful flavor!!! I took another reviewers advice and mixed the egg with the parmesan then mixed it with the spaghetti before adding it to the rest of the ingredients. I also added some peas. Delicious! Thanks for the recipe!

Simple White Cake

I'm usually a chocolate cake girl but this was excellent for homemade white cake. The only alteration I made is added an extra teaspoon of vanilla for more of a vanilla flavor. I liked this better than the red velvet cupcakes that I also made. These were light, fluffy, and super tasty! Especially with chocolate frosting. ;) Thanks!

Slow Cooker Pulled Pork

This was very good and the best part is it took less than 5 min to prepare the meat to put in the crock pot. My husband raved about it. (probably because it was something different!) and my 3 yr old kept saying "mmm". I also used another cut of pork that cost about $5 for just over 2 lbs. Thanks for the easy recipe!

Simple Turkey Chili

Wow! Wonderful! My husband just went back for thirds! I used lean ground turkey, doubled the cumin, only 1/4 tsp of cayenne and only 1 cup of water. It packed a good punch and was just the right consistency. I added a can of drained corn and so glad I did. I served with shredded cheese and low fat sour cream. Sooo yummy! Thank you for the recipe, I'll be making this frequently.

Lentils and Rice with Fried Onions (Mujadarrah)

This is OH MY GOODNESS wonderful! I made a couple of changes--used 2 onions (do it, you won't be sorry) and I added 1 TBSP cumin and 1 1/2 tsp garam masala to the lentils when they were cooking--which was a recommendation of another reviewer. also used brown instead of white rice. I served this with wheat pita bread triangles and cucumber salad (recipe from this site). My husband RAVED all night about the whole dinner!

Mom's Chocolate Chip Cookies

I think they were good but not great. Having said that, I couldn't stop eating them tonight! I'll try once more with cheesecake pudding since so many people raved over that. I made with semi sweet choc chunks and that part was awesome.

Lemon Poppy Seed Bundt Cake

Based on suggestions in other reviews I made a few changes: I only used 1/4 c oil, and added 2 tbsp lemon juice to the batter. I also used lemon pudding and added a lemon and orange juice glaze. It was very light and I didn't think the lemon was overpowering at all. I baked for 55 min and that was a little too long. My 2 yr old loved it too!

Turkey and Quinoa Meatloaf

Delicious! I made it exactly as written and cannot believe how good it is considering it's all turkey. The hot sauce gave it a nice kick and the brown sugar on top really added great flavor. I'll be making this regularly!

Braised Balsamic Chicken

I used 4 chicken breasts and cut them in strips. I used Italian style diced tomatoes and omitted most of the herbs, except added a little thyme. Next time I would season with a little bit of salt too. This tasted better the next day over brown rice.

I LOVE this. Easy and flavorful. I subbed broccoli for the bell pepper and carrot and doubled up on the paste part of the recipe as was suggested by another reviewer. Thanks for the recipe!
