Chicken Asparagus Roll-Ups

Deeeeelicious! The recipe makes quite a bit of sauce so I did put some in the middle as suggested. This is very flavorful--you can really taste the lemon in this, but it's not overpowering, it's just right. An impressive dish to serve company!

Bacon Risotto

Delicious and very easy to make. I have a 21 month old daughter who was happy to help me stir for 20 minutes! I used turkey bacon and added some peas at the end for a little color. I added some salt but thought it might not have needed any, so try it before you add salt.

Ginger Glazed Mahi Mahi

DELICIOUS! Some of the best fish I've ever eaten and super easy. I grilled it on the bbq about 4 min a side and today had a piece for lunch, cooked for 4 min in the george forman. Even my 2 yr old likes it. Don't substitute fresh ginger. It's kind of a pain to grate it but it's wonderful!

Broccoli Salad V

Wonderful flavors and texture!! My husband didn't think he would like it when he saw it but loved it! I made some minor substitutions, but also, I steamed the broccoli for about a minute then put it in an ice bath. It was still very crunchy but not entirely raw--I'm not a huge fan of raw broccoli. I used a fat-free poppy seed dressing with white wine vinegar, and used black seedless grapes and dried cranberries. I also used turkey bacon. Was delicious!!!

Pan-Seared Tilapia

Delicious! Tastes like something you would get at a restaurant. I added some cajun spice to the flour and omitted the butter at the end. Perfect!

Anniversary Chicken I

My husband really liked this but I didn't. Maybe it was because I marinated the chicken for 24 hrs in the Lawry's 30 min. teryaki marinade and used fat free ranch dressing. Maybe I'll give it another try and not marinate the chicken so long.

Chicken Creole with Chile Cream Sauce

This was very tasty. I thought the sauce was a little too thin, so I'll make this with less water or maybe I'll try making it with milk instead. I'll probably also salt the chicken just a bit.

Pasta Pomodoro

LOVE this recipe! I followed the recipe almost exactly--I used about a tablespoon of olive oil, not 1/4 cup, and used about 8 oz of capellini. I also added more basil--I love fresh basil. It was perfect!

Quick Tuna Casserole

I thought this was pretty good, but my husband and 2 yr old daughter LOVED it. One of the easiest things to make which is always a plus! I couln't bring myself to use tuna (bad memories of tuna casserole as a child) and used chicken but I think I will try tuna next time around.

Moroccan Tagine

I was surprised at how tasty this was since I'm not a huge butternut squash fan. I admit I used chicken broth instead of veg broth and added a little cumin and tumeric. Very good over couscous and great on a cold night!

Pecan Turtle Bars

I had problems with the chocolate topping. I had about 3/4 cup semi sweet and 3/4 cup white chocolate chips that I mixed, since that was all I had. The white choc chips didn't melt--I don't know why not. If anyone has comments, I'd appreciate it. These were so easy to make and yummy despite the mess that I'll try again with milk choc chips and cross my fingers!

Slow Cooker Spicy Black-Eyed Peas

I forgot the red bell pepper but it was still delicious! It turned out more like soup, and was wonderful. I didn't use a jalapeno since Iwas also serving my 2-yr old--instead I used 1/2 a yellow chili and 1/2 and anaheim chili. It gave a nice kick but not overly spicy. The recipe says "salt to taste" so I guessed and used 1 tsp of salt and it was perfect to me. Also fyi, I did not pre-soak the beans and they were perfectly cooked after 6 hours on low. Actually my husband couldn't wait and was eating them at 5 1/2 hrs!

Easy Indian Butter Chicken

Yum! This was a hit! I too used the lighter version and only used one large skillet. I carmelized the onion and garlic with the chicken in a little bit of olive oil then added the other ingredients. I used 1 tsp of salt and a little less cayenne. It was still a little spicy for me but my husband LOVED it. Next time I will add the evap milk a little later in the cooking process.

Honey Cornbread

OMG! I know this won't be extremely helpful, but I made this last night and CANNOT stop eating it! It's very moist and the honey gives it an amazing flavor. I've been making another recipe for 20 yrs and won't be making any other cornbread but this one going forward.

Addictive Sweet Potato Burritos

Yum! Very healthy and relatively easy dish. I only used about half the water with the beans for fear they'd be too runny. Also, although 3 tablespoons of chili powder seemed like a lot, the beans were flavorful, but not too spicy. My 2-yr old loved it! This recipe makes a lot so next time I will probably make half a batch for the 3 of us.

Turkey and Quinoa Meatloaf

Delicious! I made it exactly as written and cannot believe how good it is considering it's all turkey. The hot sauce gave it a nice kick and the brown sugar on top really added great flavor. I'll be making this regularly!
