Butternut Squash Risotto
Fantastic, creamy dish! I followed the advice of a few of the reviewers (slicing and baking the squash in the oven skin side down at 400 for 1 hour and adding A LOT of minced crimini mushrooms) and it was delicious. My husband helped himself to 3 servings! Definitely a keeper. Served it as a side dish with poached fish and a nice salad...
