Upside-Down Peach Muffins

Good recipe and will definitely use it again. Some of the cakes stuck at bit in the pan but not really an issue for me. I kicked it up a notch by adding 1/4c of peach schnapps to the batter and soaked the fresh peaches in some scnapps for 20 minutes as well!

Potatoes Au Gratin with Fennel and Bacon

I did like the flavor of the dish; first time I cooked with fennel. Next time I will use russet or red potatoes; the yukon gold were way too solid even tho I par boiled them

Summer Squash Bread

I agree these are really good; I made them with the one stick of melted butter and only 1/4c oil as recommended by another reviewer; Next time I may cut back on the sugar as some have recommended or I will substitute spenda for some of it; I made them into 18 muffins and I will freeze some of them. A great way to use the summer squash!!

Creamy Summer Squash Soup

I did like this recipe and I added a few of my own spices to give it more flavor; spinach and herb spice, some basil, and parsley; It could be even more jazzed up with some curry powder and I will try that next time.

Corned Beef Hash British Style

My husband really loved this one! I made a few changes...used instant mashed potatoes and I used campbells pork and beans, and leftover corned beef from a brisket I made last week. It is a keeper for sure!

Chocolate Chip Bread I

I am using a West Bend bread machine; I needed to add about 1/3 c flour to the recipe as it was too liquid when kneading. I added the choc chips at almost the end of the first long knead and most of them sank to the bottom but they did not melt. I will try to add them later next time. The consistency of the bread itself was great though and I will make it again
