Lemon Cranberry Muffins

Not only do these muffins look beautiful, but they are so light and moist and they taste heavenly! I used lemon juice and zest instead of the extract - it tastes very fresh! I also added in 1/2 tsp of vanilla extract and 1/2 tsp of baking soda (to help it rise since it reacts with the acidity of the lemon juice) I subbed in chopped, macerated strawberries for the cranberries. I used the extra strawberry juice, a little lemon juice, some sugar, and made a glaze for the tops, which I put on during the last 3 minutes of baking. It gives the muffin tops have a tangy crispness! Definitely making these again!

Whipped Cream Filling

I skipped the gelatin, and it was still really great! I also added a dash of peppermint extract and green food colouring for filling a chocolate layer cake. Yum! Everyone loved it! I also agree with the other comments, use double the amount of sugar, otherwise you can barely taste the sweetness.

Chocolate Ganache

Easy, quick, and easy on dish-washing! :D This ganache made my cake look absolutely flawless and professional. The dripping also adds to the appearance too! And on top of that, it was delish!!!

Light and Fluffy Spinach Quiche

My mayo got all clumpy, so I ended up just pouring the egg/milk mixture through a sieve and filtered out the little bits of mayo. But still, it was delicious! I only had an 8-inch pan, skipped the crust, and sauteed the onion with the spinach (I used a little less, around 6-ounces) and didn't layer. I still used 4 eggs and 1/2 cup of milk and I didn't get any extra.

Fluffy Pancakes

This recipe was great! It was the first time I had ever made pancakes (not even with mix) and they worked out really well. I used only 1-1/2 tbsp of the vinegar and added a splash of vanilla extract. I also left the butter out of the batter and used it instead to grease the pan. They were still a little dense, so I recommend 1 cup of milk instead. The pancakes didn't taste sour or bitter, they were fluffy and tasted fine. It's also great served with a little butter, some icing sugar dusted over, and maple syrup! :)

Honey-Balsamic Vinaigrette

GREAT! I only made enough for one small bowl of salad, so I just used less of each ingredient in a 2:1:1 ratio with a tiny bit of soy sauce. I didn't have olive oil so I just used veg. oil, which was ok for such a small amount.
