Baked Bar-be-Que Chicken

Very simple, easy and delicious. My 5 year old declared this to be his favorite chicken recipe, and asked me to make it every night for dinner. I followed the recipe, but pared it down to only 2 boneless, skinless chicken breasts for our family and cut the baking time in half. So juicy and tasty!

Spinach Tomato Tortellini

This is a delicious recipe! I followed it more or less exactly... and it turned out perfect! I did end up using a whole 20oz pkg of cheese tortellini, and then made the sauce as the recipe called, and it was still plenty of sauce for the extra 4oz of tortellini. This is definitely going to become one of my kitchen standard recipes! :)

Lola's Horchata

This is a great horchata recipe, and I always drink horchata at mexican restaurants. I increased the serving size to 10, and the pitcher was still only 2/3 full. I would recommend substituting the cinnamon for cinnamon sticks. Just put about 3 cinnamon sticks in the rice/water mixture and let that sit for as long as you can (I did 7 hours). The longer it sits, the better flavor you get. Followed the rest of the recipe to a tee (used 2% milk), and its great... you can really taste the cinnamon, and you don't have to worry about what all the other reviewers complain about -- cinnamon floating on the top and not mixing in. :) With the cinnamon sticks, there's no mess.

Buttermilk Pancakes II

These are my favorite pancakes. I've made them many times and each time they come out perfectly. Its best if you follow the recipe exactly, and use fresh buttermilk. Top them with a little butter, and maybe just a touch of real maple syrup. Drenching them in anything else wouldn't do it justice! I've 1/4'd, 1/3'd, 1/2'd and doubled the recipe depending on how many people are eating, and each time they are perfect. You really can only eat about 2 pancakes per person... they are big and filling!

Pizza Dough I

This dough turned out perfect. I found a package of fleischmans "pizza crust" yeast at the market and used that instead of the regular active dry yeast. I'm sure it wouldn't make a difference though. Everyone wondered if I had purchased the dough pre-made! Its super easy to make, and if you happen to let it rest/rise before baking, that's turns out fine too! We separated the dough into a few mini pizzas and baked them in our oven on top of some parchment paper, on a heated pizza stone.

Super-Easy Rocky Road Fudge

Simply divine! This tastes just like my great-aunt's family recipe. Follow the recipe and you can't go wrong! I like to swap out the walnuts for peanuts, because that's the way we are used to it!

Zesty Slow Cooker Chicken Barbecue

This is sooooo delicious. Best served over a baked potato and topped with some cheddar cheese and/or sour cream. Or, you can serve it in a sandwich roll. Don't be afraid to just put the frozen chicken breasts in the crockpot and let them cook. You don't need to thaw them out ahead of time. Its super easy to make and foolproof!

Satiny Chocolate Glaze

This is a delicious, very easy alternative to using store-bought frosting. It pours wonderfully over a bundt cake, or any type of dessert of pastry you are making. Tastes divine. This has won its way as my go-to chocolate glaze.

Queso Dip

This is a delicious queso dip! Very good and love that it uses all natural ingredients! Its very easy to make. I would also recommend adding the cheese just a bit at a time, to make a smoother consistency, and for the best (and smoothest) results, serve immediately. The longer it sits, the thicker and lumpier it gets. My husband loved it! I will be making this again!

Donut Muffins

These are delicious little muffins and super easy to make! I doubled the recipe & followed it to the tee, and instead of making 48 mini muffins, I had enough dough for only 30. If I make them again, which I probably will, I might decrease the amount of nutmeg to 1/2 tsp instead of 3/4 tsp in the original recipe.

Ninety Minute Cinnamon Rolls

These were delicious. I made a simple cream cheese icing to glaze the top and they were very yummy (cream cheese, vanilla, milk, butter, powdered sugar)! The dough never really "rose" that much during the resting periods, so I dont know if that made much of a difference at all. I used a 9x13 pan, but there was extra room in the pan, meaning that some of the gooey center oozed out into the empty side of the pan, and then baked hard onto it. Next time, I'll try an 8x10 pan, or muffin tins. :)

Apple Stuffed Chicken Breast

This was delicious, and surprisingly easy to make. It smelled wonderful while cooking. I used broth instead of water, and added some seasoning to the pan while simmering. Served with mashed potatoes & broccoli. My husband loved it, but my 1 & 4 year old boys didn't care for it. I'll probably make it again, but not too frequently because of the kids. It is hard to get this to look like the picture, so dont have that expectation. Also, this chicken definitely needs the gravy, dont serve it without! :) Yum!

Applesauce

I wasn't too pleased with this recipe... although it made the whole kitchen smell lovely while it was cooking! My husband likes his applesauce less chunky, so I made sure to chop/food process the apples very small. It would be good fresh and warm, but didn't seem that appetizing when cold or as leftovers.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

This is a good cupcake. But, it is seriously not the BEST cupcake ever. Honestly, it wouldn't make a difference to me if it had cookie dough inside or not. If I didn't have a good homemade chocolate buttercream to go with it, they would be just sub-par. I followed the directions exactly, and even froze the cookie dough balls overnight, instead of only the 2 hours it recommended. It was really neat how the cookie dough ball sinks into the cupcake as it bakes, but the consistency of the cookie dough doesn't stay purely dough-y. It does "bake" in the tiniest bit, even with cookie dough frozen overnight. I probably won't make these again, but I will try the brownie batter kind (i.e. "2nd best cupcake ever") and see if perhaps that one lives up to its title! :)
