Personal Portobello Pizza

I use a grafefruit spoon to remove the gills, this also works on deseeding any fruit. Then i used my regular stuffed mushroom recipe. Cook up a lb or more of Jimmy Dean hot sausage with cream cheese. Stuff. Of course do the regular drying out, can use olive oil on cap after the initial bake....this is so goo. Sprinkly the cheese of your choice on top after stuffing. I've used it all. Pepper jack, gouda, parmesan , . You can mix other things in the mushroom stuffing too...minced red onion, jalapeno relish, i love it hot and spicy with the 2. enjoy

Virgina's Tuna Salad

I stepped it up a notch. I added diced red onion, lots of celery for the crunch. Instead of sweet relish I opted to add dill or sometimes my favorite dill pickels diced up and my other version...Giuliano jalapeno spread ( it's really a relish)! WOW. Or...chili flakes. Let the flavors mesh for several hours or overnight. I've served in a hollowed our red bell pepper. Even diced the tops into the salad. Great on crackers too. Toasted bread is a must! I don't use the egg, but I do use Costco's Kirkland Albacore and chill the cans ahead. I keep all in the fridge for fast cool salads or sandwiches. Also, another variation....diced cucumbers (persian), dried dill.....the sky is the limit. Even added tabasco at times, or lemon juice. Have fun...let the family rate them or have several and give your guests rate them. I did this for an all day bbq as lunch snacks. SoCal so we try to make it healthy. I also use light Best Foods mayo. You can do all the above and also add small shell pasta. Enjoy

Macaroni Tuna Salad

I adapted it for California style. i used the entire 16 oz bag of small shells 1 can of black olives 5 cans of tuna, in water drained whole dill pickles in my quick chopper..just thru them in sweet relish Giuliano jalapeno spread (its really a jalapeno relish) this is delish on everything fresh ground pepper hot chili flakes lots of mayo and juice of any of your relishes to thin it out i uses 2 red onions chopped shredded carrots for color lots of celery put all the chopped, mayo, tuna, etc in a chilled bowl and blend together, just everything. rinse the pasta in cold water to chill and dump in and mix and mix taste and taste. let the flavors blend and fuse overnight. you can sub small cooked shrimp for the tuna too sometimes i put small chunks of pepper jack cheese. This is the bomb!
