Stuffed and Wrapped Chicken Breast

If my dad, the pickiest to please, thought this was a keeper, it is truly a keeper! I did follow some advice from others on the ratings which included no salt and used cream cheese with chives already in it. In the mixture I added a teaspoon of onion powder as well. I completely wrapped the chicken in bacon and held the end with one toothpick since the bacon was over lapped, this also resulted in me using two pounds of bacon! I may use turkey bacon next time to reduce the grease. The first thing I did, however was brine my chicken. They have some great brine recipes on here as well! The cooking time was a little off for me however, about 45-60 minutes to cook three breast at 350 degrees. I'm not sure why; maybe the breasts were bigger then I thought?? will have to get a good thermometer next time I think!

Marinated Pork Tenderloin

This recipe was definitely good as far as pork goes.. No one in my family is a big pork eater unless it is bacon, sausage, or ham! Everyone ate it and said they enjoyed it. I'll make again since my dad said he liked it, and he's the pickiest eater in the house hold.. yes more so then the four year old! If he liked it then it's a winner. This is definitely sweet though, not so much on the actual pork. I also used something called a pork brisket, and not a pork tenderloin. It did not effect how it tasted at all though, and it was very good!

Potato Chips

These are great! I noticed that there were a lot of complaints on not being able to make enough.. I think that's my only downfall with it as well. I tried a paper towel trick, but it did not work, it really steamed them more than anything else. If I figure anything else out, I will post it, of course! Also, if you want to make thicker chips out of these, be prepared to have a very sore jaw! They come out too chewy to make thick chips out of! About 3 1/2 minutes worked best for me in my microwave. My husband and daughter agreed that these were very good chips! My husband said they were better then lays potato chips! As a last note, in order to keep my chips from getting that icky brown look to them, I soaked them in cold water while the others were cooking. As a result of this, I would dry them off real quick on paper towels and use a paper plate, not a dinner plate. If I used the dinner plate when I soaked them in water, they would stick to the plate. Next thing I did was seasoned them before they cooked.. that way the salt or whatever I used to season them would stick better to the chips! I also used the trick of just using spray oils.. less mess means less to clean up!

The Best Chicken Fried Steak

Any time a family member even starts to talk about good chicken fried steak, I hand over this recipe! Country gravy is something I haven't been able to master yet, so I usually just use the packages. I also like to play around with the seasonings a bit. Seasonings like paprika seem to work great with this recipe. I also season the meat to add more flavor. I tend to put them in the oven, as well, to help keep them warm. BEST chicken fried steak recipe!
