Easy Cheeseburger Tacos

This was a big hit. I made it for 8 teenage girls, and they loved it. My husband loved it too. The sauce doesn't look very good - which means some of them weren't willing to try it with the sauce. But it is great with or without it. I made it exactly as written - turned out great. They were very small though- I doubled the recipe, and used what I thought was "normal sized" soft tacos - but I couldn't fit a lot inside, and could barely fold it around and tuck in the sides. It also made a LOT more than the serving size indicates. So they must have made bigger ones. They were still great- but next time I'll use larger tacos.

Pork Medallions with Balsamic Vinegar and Capers

Absolutely fantastic. We didn't even end up using the sauce (lemon caper) once it was all said and done, just because the pork was wonderful without it! My husband said it should be served at a restaurant! And he is not very liberal with his compliments! :) I tried the sauce on a few pieces- it is great. Just not necessary. Save yourself a few ingredients and just make the pork using the broth & balsamic. I did have to add more chicken broth during cooking. Keep it handy.

Jamie's Minestrone

Made this recipe exactly as written, and it is wonderful!! Did use whole wheat pasta, but that wouldn't/didn't affect anything. The parmesean cheese really makes a diference. I just sprinkled it directly into the pot at the end, since i'll be reheating and eating this over a week or so. It is very thick the next day so you could add some more chicken broth when making it. But regardless...Fantastic!!

Ultra Creamy Mashed Potatoes

This turned out horribly. It had the consistency of Elmer's Glue, and there was no recovering no matter what I tried. Followed the recipe, but used half and half because I couldn't find any "light" cream. Maybe that is what did it, though other reviewers claim they did the same and were fine. Had to run Boston Market for mashed potatoes for Thansgiving dinner- thank goodness they were open!!

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

I never review (though I should more often) but I have to recommend this to anyone who is considering it. Made it exactly as indicated, though had to slice the tenderloin and grill the pieces to get it to cook through (it was a large tenderloin). Excellent taste, easy to prepare, HUGE hit with "kids" ages 9 - 43 (all of whom are VERY picky eaters, 43 year old included!!). They asked when we can have it again! Served with basic mashed potatoes and corn on the cob.
