I am a born and bred island girl hailing from the small and tranquil island of Grand Cayman, part of the Cayman Islands. I come from over 200 years of island cooks - well renown for our culinary skills and have been in the kitchen with my mom and grandmother since I can remember!
My favorite things to cook
I love to bake - it is the first "cooking" thing that I ever did and it kinda stuck with me. I can hold my own in all other areas though. My husband is from the Southern United States and I can fry it up like the best of them! But nothing is quite like doing a big Cayman-style "cook-up".
My favorite family cooking traditions
My favourite family cooking tradition is Pineapple Upside Down Cake! My grandmother taught me to make it, and it is a family favourite! No family gathering is right without it and it gets requested for EVERY family function!
My cooking triumphs
I have two: 1.) I'm allergic to seafood, but am not so sensitive to it that I cannot cook it. When I was able to cook some Cayman style fish perfectly - that was definitely a triumph! 2.) Making fondant from scratch! I do cake orders occasionally and one requested was out of stock in the store and so I found a recipe and made came out great and I have been making my own ever since!

Plain Egg Less Cake
Most of the eggless cake recipes I have found are chocolate, so it was great to find one that "vanilla"-ish. I made it for a friend's son who is allergic to nuts and eggs. I tweaked it a little bit - added about 3/4 C granulated sugar and an extra tsp of vanilla - turned out great! Tastes wonderful with fresh fruit filling and buttercream icing :).

White Almond Wedding Cake
This was delicious and tasted homemade. The cake was super moist and had a great flavor! Thanks so much for sharing this recipe!

Ugly Duckling Cake II
I know this recipe as Fruit Cocktail Cake, and have been making it for quite was passed on to me from a friend via a lovely old lady. I usually use 2 cups of white sugar in the cake batter, but will use "lite" fruit cocktail to balance the sweetness. I also add vanilla to the topping and poke holes in the cake before pouring it on time so that the cake can absorb all of the liquid - the result is a yummy "tres leche" type cake!
