Perfect Ten Baked Cod

I followed the recipe with the exception of adding garlic. It was still too bland for us. I think it would be much better with the addition of some spices to 'kick it up a notch'. If I make this again, I will add spices for flavor.

Quick and Easy Brownies

These were perfect for quick and easy brownies. I went strictly by the recipe and they were very good. Next time I may add some instant coffee to 'kick it up a notch', but this recipe is good as it is.

Creamy Pesto Shrimp

This was a really tasty pasta dish. Since we like our pastas saucy, I only used 8 ounces of linguine. It would have been way too dry with the full pound of pasta. I used half and half because I didn't have cream, and I also added some garlic powder to the sauce. My husband and I really enjoyed this and will make it again.

Ten Minute Enchilada Sauce

This enchilada sauce was FANTASTIC! I used this over White Chicken Enchiladas and it was one of the best meals ever - just ask my husband. The only thing I changed - I used all purpose flour. And I added a few green chilis. I totally recommend this recipe!

Cinnamon Raisin Swirl Bread

YUMMY - I say this as I am eating my second piece just out of the oven. I was a little concerned that it would not turn out because the dough was like a thick cake dough - but it came out to be the best Cinnamon Raisin Bread I have ever tasted! I followed the recipe exactly except that I added cinnamon to the batter. I also plumped by raisins by bringing them to a boil in water and let them set for a few minutes. I did use my bread maker to make the dough and added the raisins when the timer beeped. Then I poured the dough onto a floured surface and kneaded it (adding a little flour) for about a minute. I just shaped the dough into a rectangle and smeared my butter, cinnamon, and brown sugar on top - then rolled it up and put it into a Pyrex loaf pan, let it rise for an hour, then baked. It came out perfect!!! Excuse me while I cut a piece for my husband....

Chicken Pot Pie V

I basically followed the recipe. It does need some additional liquid, so I would add about 1/2 to 3/4 cup more chicken stock next time. I also think a chicken bouillon cube would add to the flavor and maybe add the sage to the chicken mixture instead of to the crust. I had to add a little more milk to the crust, too. But overall, this was a good recipe. My husband and I ate about half of it and have the other half for lunch tomorrow.

Penne with Chicken and Pesto

This is a great recipe - quick and easy. I modified it by using only 8 ounces of penne pasta, chicken that had been grilled yesterday, and half and half instead of heavy cream. I also added a pinch of cornstarch to help it thicken. It was WONDERFUL! We like our pasta with lots of sauce, so this worked out perfect. I served it in a bowl, topped it with shredded parmesan, and garlic bread. This will be served many times in the future.....yummm.

Quick Black Beans and Rice

This was a great side for the Cuban Midnight Sandwich. I followed the recipe with the exception of adding a couple of minced garlic cloves in with the onion and also my black beans were Cuban style black beans, which had some peppers and other spices added. I also used instant white rice because that is what I had on hand. Since I had leftovers, I will add some chicken and make a burrito for dinner tomorrow evening. Yum!
