Coconut Jerk Chicken

Excellent recipe. Loved the coconut flavor! I used boneless chicken thighs instead of breast and reduced to 1 tsp (actually 1 cube) of chicken bouillion to reduce sodium. Also used more butternut squash (about 2 cups) to increase the healthy vegetables.

English Muffin Bread

This is so easy for a nice homemade breakfast treat. I have substituted 1 cup of flour with whole wheat flour instead to make it a little more nutritious, yet still good.

Tomato Bisque III

For those that are having trouble finding "fire roasted diced tomatoes" I found them in the healthy/organic section of our grocery store. I however went the cheaper route and used zesty diced tomatoes with green chilis. Probably one can of that and one of regular would be good because it was a little spicy, but still good!

Swiss Steak Dinner

This was very good. I cut the salt to just 1 teaspoon and didn't miss the extra. I also was short 3 onions but it worked out fine. I added some halved cherry tomatoes with the potatoes and onions.

Chipotle Cream Chicken

Excellent recipe and easy too. I would certainly make this for company. I thought two chipotle peppers might be too much but they were just right. I did chop them up before adding (with their seeds too)

Awesome Summer Watermelon Salad

I really enjoyed this! I only used about 1/4 to 1/3 cup of the dressing that I made and am saving it to use elsewhere. Even my husband, who really does not like when I cook with feta cheese, had to admit that he liked it. Teenage daughter not so fond of it but I'd say it's for more mature tastebuds. Also, found that it was ok as leftover too.

Eggnog Quick Bread

Used black walnut extract instead of rum extract because I don't like that flavor in baked goods. Suggest creaming the butter and sugar first, then adding eggs, eggnog, extract and sugar.

Green Egg and Ham Cups

I thought this was a lot of work for a not very special result. Plus, it calls for lots of ingredients I don't normally have on hand - leeks, gruyere cheese, ham slices, cream. So it ends up being pricey.
