Raspberry Almond Tart

I thought this was wonderful and easy to make. Use a good quality raspberry jam. I wasn't sure if I should grease the tart pan or not and choose not to - worked fine. Also, my pan was only 9 x 3/4 inch, and that worked as well.

Baked Potato Casserole

Very good. I omitted the bacon, but used cheddar and smoked gouda cheese that I had on hand. I made it to use up some leftover dip from Thanksgiving which had a mayo/sour cream base.

Family-Favorite Oatmeal Cookies

Sorry, but this was not my idea of a good cookie. The texture is much more like cake and they don't hold they're form well. I had lots of crumbs to clean up between the cookie sheets and the coooling racks.

Tortellini Soup I

Only needs one green pepper. I used 4 cups beef broth and 1 cup veg broth I had in freezer. Also used whole wheat tortellini to make it healthier.

This is so easy for a nice homemade breakfast treat. I have substituted 1 cup of flour with whole wheat flour instead to make it a little more nutritious, yet still good.

Chicken Cheese Chowder

I used vegetable stock I had on hand with a couple of boullion cubes. Also used the cheese I had on hand- some cheddar, gruyere and goat cheese. It worked fine.

Green Egg and Ham Cups

I thought this was a lot of work for a not very special result. Plus, it calls for lots of ingredients I don't normally have on hand - leeks, gruyere cheese, ham slices, cream. So it ends up being pricey.

Bloody Mary Short Ribs

This was good if you're into short ribs (they are a little fatty for my liking). I like another reviewer's idea of using a roast, or maybe I'll try it with beef stew meat next time. Also, in order to fit into my 5 liter Corningware dutch oven, I needed to cut back on the liquids (only used 2 C of bloody mary mix and would also cut back a bit on the wine and beef stock) Also, yield is more like 6 servings.

My Amish Friend's Caramel Corn

Wow. This is really good! I mailed half of it to my college aged daughter in a care package - but I could have eaten it all myself!! I did use butter instead of margerine because I'm of the belief that butter is better for your health.

Tex-Mex Beef and Cheese Enchiladas

Good and less fussy to make than many enchilada recipes. I did add an onion, 4 cloves of garlic and cilantro to the meat mixture as others have suggested. Also, just heat tortillas in the microwave - easier.

Awesome Summer Watermelon Salad

I really enjoyed this! I only used about 1/4 to 1/3 cup of the dressing that I made and am saving it to use elsewhere. Even my husband, who really does not like when I cook with feta cheese, had to admit that he liked it. Teenage daughter not so fond of it but I'd say it's for more mature tastebuds. Also, found that it was ok as leftover too.
