Gluten Free Pastry

My husband has really been missing pies lately, so for Thanksgiving, I used this crust for my sweet potato pie and it turned out great! Based on the reviews here, I did use all-purpose gluten-free flour instead of the rice flour and rolled it out between two pieces of wax paper. I also used butter instead of vegetable shortening since that is what I had on hand. I had to use an extra little splash of water more than what was called for, but I live in an extremely dry climate and this is normal for me to have to do with most baking recipes. The rolled dough didn't hold together enough to transfer into the pan in one piece, so I had to cut pieces out and patch them together in the pan, but next time I will try another poster's suggestion of chilling the rolled dough in the freezer before trying to move it and see if that helps. Over all, this was a very easy, straigt-forward and tasty recipe that I will be using again. I made one and a half times the recipe for the bottom half of a 9" pie pan.

This is my go-to rice pudding recipe. I've made it many times for several different audiences and have gotten rave reviews every single time! It turns out great consistently and is so EASY!

Tuna Noodle Casserole from Scratch

We love this recipe and have made is many times! It's our favourite way to eat canned tuna. I hunted high and low for a tuna noodle casserole that didn't use canned soups or mixes and am so glad I found this recipe! Since my husband has been diagnosed with a severe gluten sensitivity, I've had switch the flour in the sauce for corn starch, 1:1, and skip the bread crumbs, still with the same great taste! I've also used canned salmon, but prefer it with the tuna.

Beef Stroganoff with Noodles

I've made this recipe several times, always with ground beef, which shortens the cooking time significantly and makes it into a great weekday dinner. Also, PLEASE, PLEASE DO NOT use the stated amount of seasoning salt, as other reviewers have mentioned! Only salt to taste. Otherwise, a good dish that's good for leftovers, too.

Kickin' Collard Greens

We'd never had collards before. Based on the reviews, I decided to try this recipe when I found them on sale at the grocery store. Both my husband and I really enjoyed them! I used real bacon bits instead of sliced bacon since that's what I had on hand. My husband, who avoids anything green, went for seconds!

Tea Punch

I was looking for something a little different from standard fruit juice and soda punches, and this recipe was a huge hit at our engagement party. It will likely be making a come back at the bridal shower or the wedding reception. It's very tasty and the tea adds an extra depth to the flavour and the colour. I will probably cut down on the surgar a little bit next time, though.

Parmesan Chicken

Fantastic dish. I was looking for a flavourful, easy, simple chicken parmesan recipe and this was the one that impressed. As a nice finish I baked the chicken in the oven with pasta sauce and topping of parmesan after browning it in the skillet.
