Meatball Nirvana

This recipe really works! I needed a quick meatball for some hungry kids and this did the trick. I made it "as is" except that I didn't use quite as much bread crumbs. Well done!

Chili Verde Stew

I'm a single guy with ADD (which means I dont ALWAYS get all the ingredients right...lol), but this was just excellent. It worked exactly as described. The only modification I made was that I used cilantro instread of parsley....which is sort of the same thing anyway.... well done Doris!

Quick and Easy Sicilian Meatloaf

This is an awesome recipe. Ive never been a big fan of meatloaf. But I gave this a try and fixed it just as described with the following changes: I had no ham so used pepperoni instead. ANd i added sliced olives. Everyone loved it. I cant wait to try it again.

Boneless Buffalo Wings

Ok, here's the thing: I made both a baked batch and a fried batch at the same time. Sadly, the fried batch was quantum leaps ahead. They were awesome. You may read a lot of anal reviews taking great exception to the NAME of this recipe and thus giving it only ONE STAR: Frankly, I couldn't care less what you call this reciope -- it rocks. All I really modified in this excellent recipe were the proportions of the ingredients. A previous review suggested using more than a cup of flour - absolutely do that! I used 2- 3 cups of flour to be sure. I tripled the spice requirements (my son threw in some red pepper flakes when I wasnt looking I found out later), and I took another reviewer's advice and cut way down on the milk-to-egg ratio: I used 3/4 cup milk to 4 eggs. I added Tapatio sauce to the egg-milk mixture before dipping. The results of the fried batch were excellent! Perfect comfort food for the football game! And...my son claims it was the red pepper flakes that did the job (...right...).

Pecan Pie III

This is the first time Ive tried this recipe. It worked perfectly as written --- with the addition of 1 tbsp flour mixed into 1/4 cup melted butter and then added to mixture. I checked it at 30 mins and it was still VERY jiggly, so 45 mins was perfect. If I can do this right...anyone can. Its awesome and satisfied my craving for pecan pie...

Banana Banana Bread

This is an excellent recipe. As others have mentioned, it is KEY not to over-blend the banana mixture with the flour mixture. It's excellent as is, but I also made a batch adding valilla, pumpkin spice and cinnamon -- i like those flavors -- and I topped it with a bit of brown sugar. And by gently folding in the banana mixture I still got some excellent "chunks" of banana in it. I made these into muffins and baked for only 25 minutes. Nice!

Salisbury Steak

I followed the recipe and changed very little -- just made extra gravy and used the idea of Progresso Onion soup. It was fantastic! I hope everyone keeps reviewing recipes and gives alternative ideas.

Oven Barbecued Chicken

It was excellent but I altered the recipe. I eliminated the curry and added 1 tsp of cumin, 1 tbsp of chili powder and 1 tsp of crushed red pepper. Instead of breasts I used thighs and drumsticks. My sons and college buddies ate it all and wanted more.

Marinated Ranch Broiled Chicken

Yup, I really liked this. It was easy, fast and very filling. I ate the entire thing in one night and fixed it again during the weekend. I wonder what would happen if you used a different dressing mix? And could you grill it?
