Connie's Zucchini "Crab" Cakes

Tried these last night and they are wonderful. A great use of zucchini and the flavor really is much like a crab cake. Better than the bread crumb laden crab cakes I have had!

Loaded Vegetarian Quiche

Delicious! I subbed different veggies but the recipe is sound and the results were fantastic! Mine had shallots, asparagus and mushrooms with a blend of cheeses and was great for breakfast and dinner.

Creamy Jalapeno

So good and so easy! I stirred in several tablespoons of a super hot garlicky salsa I had made the day before in place of the jalapenos and really enjoyed it.

Roasted Chickpeas

450* Way too hot in my oven, after 30 min they were black. Must be an oven temp thing. Tried again at 400* and checked at 30 min and the dry roast process was okay. Never thought my oven was better than mediocre but heat and time wise apparantly it is. Not a problem with recipe, must be my appliance.

Spinach Brownies

My first with the recipe and I didn't have mozzarella so I subbed with havarti and it was so good! Made this to go with the juicy roast chicken recipe from this site (wish I could take credit for that excellent recipe) and some roasted new potatoes. Life is good!

Ginny's Cauliflower and Pea Salad

Really good. I kind of guestimated the amount of dressing and it turned out fine. Looked at some other cauliflower salad recipes and added some chopped radishes and a handful of broccoli for color. This recipe is a keeper!

Mustard Greens 'n Beans

Delicious as is or withe the addition of chicken, fish or even peppered bacon. I usually make this in a similar manner with a swig of white wine instead of viengar and add a protein, pasta and aditional olive oil with or without cheese (shreds of parm are my favorite) as a meal. Crusty bread is great for dipping/

Black Beans and Rice

Excellent recipe. I added a can of undrained Rotel with lime and cilantro and 1 minced jalapeno to spice it up. I cut back on the broth by 1/2 cup to allow for the undrained Rotel. Good hot or cold and a great enchilada filling with some grated pepperjack cheese.
