Cranberry Chicken

Reviewed: Jan. 20, 2011
OMG! We really enjoyed this. The only change I made was to use swiss cheese instead of mozzarella. Next time I'll try asigo and will add 1/2 cup of chicken stock to the soup mixture so it's a little more sauce-like and can be used over the balance of the stuffing mix (I cut the water to a cup). Will definitely make this again.

Sweet Restaurant Slaw

Reviewed: Dec. 24, 2010
I loved it! I did cut down on the sugar and used malt vinegar instead of white (I don't know why!). I used the salt to dry out the slaw mix a bit since I won't be serving this until tomorrow. Instead of poppy seeds I added a little celery salt and fresh ground pepper. I know this sounds strange but hubby and I both love sliced green olives in our slaw! It adds a little bit of zip and most people like it after they try it. I would imagine that this would be great on a bbq pork sandwich like they make in the south. I think I'm going to be making more slaw in the future. Thanks for the recipe Sandi!!!

Buttery Rolls

Reviewed: Dec. 10, 2010
This is the first time I have made yeast rolls successfully! They are delicious! I followed the recipe but added vital wheat gluten to facilitate the rising. I was a little confused when checking the dough after 5 minutes and determining that it was a little dryand it was suggested to add water which is not in the recipe anywhere. Well, I did it and they turned out beautifully! I'm now going to throw a couple in the freezer hoping they do well. I'd like to make them for Christmas dinner but won't have time to do it in the morning and am hoping to make them the week before and thaw and heat them up for dinner. I also may add just a tad more sugar next time since I feel they could have been a bit sweeter. Thanks Debbie for the wonderful recipe!

Grilled Potato Casserole

Reviewed: Sep. 5, 2010
I don't know what happened! I followed the recipe EXACTLY except the potatoes were't done after over an hour on the grill. Grill thermometer registered 350ยบ during the entire time. The potatoes weren't all cooked through but the parts that were weren't very good.

Stuffed Green Peppers I

Reviewed: Aug. 5, 2010
This is really close to my granmothers recipe but a whole lot more work! I don't pre-cook anything! Follow the instructions for prepping the peppers, combine the stuffing ingredients and lightly stuff the peppers, place in a dutch oven filled with soup/water combination, cover and simmer until peppers are soft and stuffing is cooked through. A lot less work and you're not lighting the oven! I usually make some extra meatballs out of the stuffing mix for those of us who don't like peppers. Served with mashed potatoes and the gravy from the peppers alongside cucumber salad and sweetcorn you've got a great meal!
