Winter Fruit Salad with Lemon Poppyseed Dressing

This is my favorite salad to serve all year round. The biggest change I make is baking chicken with the lemon poppyseed dressing. Chicken, fruit, salad, and nuts- what a dish!

Baked Spaghetti II

awesome new taste to spaghetti- just a few minor changes. 1.) be sure to generously season your meat. I used chopped onions, italian seasoning, red onions, red pepper, garlic salt, and s&p. 2.) I added a can of chopped tomatoes with green bell peppers to the meat as well. 3.) After I added the soups I added 1/2 cup water and 1/2 cup milk- reserving the last 1/2 cup of milk. 4.) with the last 1/2 cup of milk mix 2 lrg. eggs with 4 tbl. spoons of grated parmesan. 5.) to layer: I buttered the bottom of the casserole dish first. added the spag. 2nd, poured the egg mixture over just the noodles to form a bond- 3rd, layered graded cheddar cheese, then lastly topped with the meat mixture. I added mozzarella cheese to the very top. Anywho- the final product was thick and creamy, with extraordinary flavor. I was hesitant of the cream of mushroom soup- but it should stay for sure. Be brave and try a new flavor to a traditional dish! I served ours with home made garlic bread as well, we will be having this much more often- my husband and 2 yr. old daughter loved it.

Bacon Cheese Frittata

this is an excellent skeleton recipe!; with that I do add my own ways. 1.)- I use ten eggs instead of 6- making the dish more larger and denser. 2.) I use about 3/4 cup Jenni O turkey ham, cubed vs. bacon strips. 3.) I spruce it up with my own veggies- including diced green bell peppers and red pepper flakes. FINALLY, (here's the kicker), I add pillsbury crescent rolls as a topper. In the last 15 minutes of baking, save 1/2 cup of cheese from the recipe and top the casserole with the remaining cheese, then lay 1/2 the can of unrolled crescent dough to the top of the dish- leaving air pockets for breathe. This may seem like a lot of work, but it serves for a delicious dish- I've made it several times and it's a favorite in our house! Little note, the cooking time bumps up to 45-60 minutes- the extra eggs really add for extra time. The casserole center needs to be solid before the crescent topper is added. No one wants a runny center!

Haitian French Toast

great recipe. Except, with using thick whole grain bread- I would still opt to putting the mixture in a bowl and dipping the bread vs. soaking it. The bread was a little too soggy for my family liking.
