Curried Chicken

I was so surprised how good this was. The only difference, which I think is what made it special was that I sautéed the chicken in coconut fat. Used zingy marleys brand that I had on hand. Can get it at whole foods. Can add nuts and raisins which makes it like traditional curry.

Simple Pork and Cabbage Skillet

I was amazed at how delicious this was. I had sliced pork tenderloin that I browned first in olive oil then removed and followed recipe, but only cooked for 20 minutes. I then added back the pork, which was sliced very thin and cooked for an additional 5 minutes. I did add 1 heaping tsp of brown sugar in addition to the ingredients. After I thickened the gravy, I added a dash of apple cider vinegar to give it a hint of acidity and it made all the difference. This is a definite keeper. Thanks!

Eggplant Parmesan II

This was so easy and so delicious. Even my husband who claims he doesn't like eggplant liked it. For the tomato sauce we cooked down some yellow, red tomatoes (8 cups), a couple stems of oregano,thyme and onions for about 1.5 hours. Put some tomato paste in at the end to thicken. No salt or pepper was added since we have to watch our sodium intake. I soaked the sliced eggplant in salted water for 30 minutes then drained them between paper towels for another 15 minutes, then egged and breaded them.

Halloween Eye of Newt

Loved how these came out. Guests gobbled them up at my Halloween party. I used a corn cob holder to draw blood veins by dropping red food color in small dish and dipping the sharpe ends of the corn holder into the dye and scraping the lines on the white of the eye. Comes out well.

Baked Acorn Squash with Apricot Preserves

I really liked how this wasn't too sweet like the usual brown sugar recipes for squash. It had a lovely hint of flavor that made the squash come alive. Note, I only give 5 stars for the rare recipe that is to die for.

Chris' Chili

Oh my goodness, best chili I have ever made. I used half ground sirloin and half sirloin steak to save money. Made double batch for party and people would scraping the crock pot for every last drop.

Plum Pie

While I used my standard pie crust recipe and didn't have enough sugar for the plums, it came out great. The key is to use italian plums, which are only in season a short time. They aren't as sweet. I found them on sale at my favorite grocer for only 1.68/lb. I remember some 20 years ago, a man I worked with brought in an Italian plum pie that was to die for. I love fruit pies. This did the memory justice.

Spooky Witches' Fingers

I made the same look with celery sticks stuffed with blue cheese and cream cheese with green food dye. I drew knuckle creases at joints and carefully sprinkled with paprika. Used sliced almond for nail. Looks great.

Orange-Fennel Salad

I followed the recipe exactly except not sure about size of arugula since I don't have a way to measure. My husband and I agreed that is was nice to have something different, but there are other salads we like better. Unusual, but not over the top great.

Chestnut Soup

Haven't made it, but had chestnut soup at 5 star restaurant and loved it. It was creamy with just a touch of sweetness. They put a 3oz custard in the middle of the soup bowl and poured the soup on top then put sauted mushrooms on top of the custard. I don't care for mushrooms but thought I would share. You could make custard using those little pyrex serving finger bowls and then turn upside down in the pan. Flavor the custard anyway you like. The restaurant's custard didn't have much taste but the texture coupled with the soup was great.

Jicama and Pineapple Salad in a Cilantro Vinaigrette

I had to modify recipe as I didn't know my peppers and ended up with a caynenne pepper so I used 1/4 of the amount called for since it is hotter than a serrano pepper and substituted granny smith apples for the jicama which was unavailable at the store. It was pretty good, but I won't give 5 stars unless it is out of this world.

Southwestern Quinoa Salad

Creamy Red Pepper Soup

I half a large jar of peppers that I wanted to use up and it just happened to be the same amount that was called for in this recipe. I didn't care for the potatoes in this and it didn't seem to have the wonderful red pepper flavor as in other red pepper soups I have had. I had to add more salt than I care for because of the blandness.

Luscious Lemon Parfait

Made this recipe because trying to get rid of pantry items and had the ingredients. I had old jar of lemon curd I especially wanted to use up. My husband loved this and so easy. Good enough for entertaining.
