Don Struble's Puerto Rican Pork Roast

Oatmeal Chocolate Coconut Macaroons

This recipe needs to be revised. There was way too much liquid to "drop" them onto a cookie sheet. They kinda spread out instead of holding their shape. Needs more oatmeal/coconut or less butter/milk. They should also be cooled to room temperature, and then refrigerated until ready to serve.

Chewy Brownie Cookies

I give these a 5 star! They taste just like a soft chewy brownie. They are very sweet, you could probably cut down on the sugar if you wanted to, but I like them this way. I only had 1 cup of brown sugar, so I used 1/2 a cup of white sugar along with it and it turned out great!

Blueberry Crisp II

This was so good that I made it again 2 nights later. The second time I made it I doubled the crumb recipe and pressed 1/2 into a 9x9 pan, then added only 2 cups of blueberries, and sprinkled the rest of the crumb mixture ontop. Was delicious!

Pear and Almond French Toast Casserole

Terrific recipe! I used fresh pears instead of canned, and it turned out great! Love the syrup that the butter and brown sugar create, it's just enough to give it a wonderful sweetness. UPDATE: I just made this recipe again, and used vanilla soy beverage instead of milk, and only put in 6 large eggs, forgot to measure the amount of bread I used, maybe 3/4 of what's recommended? Just used enough until it soaked up the milk/egg mixture, and it turned out great! A little less "rich" tasting, but still very good.

Baked Zucchini Squares

I've had this recipe on hand for years, it's very good! My recipe calls for garlic though. For those who like garlic, add 4 to 6 cloves, minced. I also use 1-2 tbsp fresh chopped basil instead of 1 1/2 tsp dried basil.

Homemade Flour Tortillas

This is the best tortilla recipe I've ever found. I used shortening instead of lard because I didn't have any, and I used 1-1/2 cups of hot water, like many have suggested, and they turned out perfect!

Brownie Caramel Cheesecake

Well, there's so many reviews about this recipe that if anybody actually falls upon reading this, I'll be so happy! I'm giving this recipe a one star, and ONLY because I think that it hasn't been tested properly. IMO there' a MAJOR MISTAKE in this recipe. Nearly everyone's complained about the caramel running out of the cake. Here's why. 5 OUNCES OF EVAPORATED MILK IS WAY TOO MUCH. That's roughly 2/3 of a cup! No wonder it oozes out! Use 1/4 cup of evaporated milk with 14 ounces of caramels. And if adding chopped pecans, add 1-1/4 cups, that will also help the caramel stay put. Also I think that this recipe should just say "9 ounces of packaged brownie mix, prepare as directed on package".... no wonder so many people have messed it up.. lol... I bet they're adding an extra egg and water to the mix!

Beer Can Chicken

I've made this before and it's very good. I find that instead of sprinkling the 1 tsp of seasoning into the cavity, it's easier to put it inside the beer. Also I use an aluminum pie plate large enough to hold the beer can and chicken. This catches all the drippings and reduces flare-ups. I've also made this recipe using a spice called Montreal Chicken Seasoning.

Creamy PHILLY Maple Bread Pudding

When I first saw this recipe I thought "Wow!", but after reading the reviews I knew I had to make some changes to it. I only gave it a three star, cause I probably won't be making it again, just because I'd rather make other things with cream cheese than bread pudding!
