King Ranch Chicken Casserole III

I made it pretty much how the recipe called EXCEPT I did saute the onion and green pepper AND I mixed all the ingredients with the exception of the tortillas and about 1/3 of the cheese, together. layer tortillas, half the mixture, another layer of tortillas, rest of the mixture, top with the 1/3 of the cheese that was left. PERFECTION! We lived in South Texas for six years and I have had this millions of times, this is the best recipe I have come accross.

Grandma's Corn Chowder

We loved it. I didn't do the bacon because we didn't have any in the fridge, but it still turned out fantastic!! I used one can of creamed corn and one can of regular corn! total hit, leftovers were amazing!

Famous Butter Chicken

We loved this recipe!! Very moist! I did add parmesean cheese, and garlic powder to the cracker crumbs like others had suggested. I also melted the butter and drizzeled it over the top, and was very glad that I did. This chicken dish was full of flavor, and did not disappoint! Thanks ~ Scarlett

Cheese Garlic Biscuits I

THESE WERE THE BEST! I used to love them at that famous Seafood Restaurant (and they taste EXACTLY the same!), and we no longer have many of them on the east coast! Now I can make them for myself! Thanks so much ~ Scarlett

Amusement Park Cornbread

This was the BEST cornbread ever! The cooking time is more like 40 minutes then 20 minutes though. Next time I might use a larger pan, just so it bakes through a little quicker. The bottom became quite brown (very done), because I had to leave it in so long to cook the middle. But, overall it was fantastic, and I will definitely be making this again! ~Scarlett

Best Tuna Casserole

I really liked this recipe, and will definitely make it again. I omitted the onions and mushrooms, and added a cup of frozen peas. The recipe did not mention whether you were supposed to add the two cans of water to the soup, but I assumed that I was because it would have been way too sticky! I also just added cheese on top, and omitted the chips because I wanted to use this as left overs, and people had written that the chips got soggy. Overall, a definite keeper! I think it was even better heated up! Thanks! ~Scarlett

Gary's Stuffed Mushrooms

This was a good recipe, but very garlicy. I cut the amount of melted butter in half, and was glad that I did. I think the mushrooms I used were too big because they ended up being really watery. I will definitely make this again, but next time use smaller mushrooms, and stuff them a little less.

Banana Pudding IV

This was such a hit! I made it for a friends birthday, and it turned out perfect. I made a couple changes, used two of the smaller 3 1/2 oz packages of vanilla pudding (couldn't find the 5 oz size), and only used 3 oz of cream cheese, but the pudding turned out the creamiest, and most delicious I have ever had. Secondly, I decided to layer the desert. Starting with a layer of Nilla wafers, then a layer of bananas, then a layer of the pudding, I reapeated this twice, and topped with the remaining cool whip, and crushed Nilla wafers. I ended up using an entire box of nilla wafers, but it was perfect. I will make this for many get-togethers!! Scarlett

Laurie's Shepherd's Pie

I made a couple changes, but this recipe turned out great. I omitted the pie crust, and just used a regular caserole dish. I also omitted the bell peppers, only used half of an onion, and seasoned the meat with salt and pepper, and garlic powder while the meat and onions were browning. I ended up using three large potatoes, which needed about four tablespoons of butter, and about a half a cup of milk (also added salt and pepper to the mashed potatoes). Next time I will probably use an extra half can of regular corn as well, and maybe a little more meat, just to make it a deeper caserole. Overall this was a definite hit that I will make often :) Scarlett

Classic Macaroni and Cheese

We liked this recipe, but were not crazy about it. I added crushed saltines on top for the last 20 minutes, and that helped, but it just was not creamy enough for my taste. If I use this recipe again, I will definitely shred the cheese instead of slicing, so that it will cover the whole dish more evenly.(I just made this again over the weekend using a SHREDDED blend of four cheeses, two and a half cups, alternating layers of the macaroni and cheese, then topping it off with the milk and crackers, it turned out SO MUCH BETTER, and much creamier! I will be making this variation of this recipe often!)

Taco Pie

This is definitely one of my new favorites! I made it for a small gathering of friends, added a layer of refried beans before the meat, and cut the sour cream in half, it was a hit! Very easy to make, and excellent to heat up as left-overs!
