Working Mom. Married 23 years. Have 2 children, Daughter age 20 (lives in Memphis) and Son age 15. Son plays year round sports and husband and I are at every game!! Always in a rush around our house! Daughter always wants Mom's cooking when she comes home.
My favorite things to cook
I love to enjoy a meal at a restaraunt and then make it my way at home!
My favorite family cooking traditions
Anytime one of my children bring a new "girlfriend or boyfriend" over to meet the family I usually make a traditional spaghettti meal. The fam always teases me that we get to eat on the good plates and I make the good spaghetti when we have company! So when they are spaghetti hungry they always ask for the good spaghetti. Otherwise I tend to make shortcuts because we are always in a hurry!!

Mini Meatloaves
I loved it. I used Italian Bread crumbs and did not add the cheese. The sauce was great but to sweet for my husband. I can remedy that. Easy, good, and quick meatloaf. I liked it because it wasn't mushy.

Perfection! My huband and I used to go to this chain Tex-Mex place 2 or 3 times a week! Food so-so but the margarita's were to die for! Sadly, restaurant closed and I never could find that fantastic margarita again. Well guess what? This is it! Made it exactly to recipe, loaded the salt on the rim (what can I say, I like salt) and presto! Perfect Margarita! Thank you!! Trying out at party tomorrow night. Can't wait for the reviews!!

Southwestern Egg Rolls
I made these for Superbowl game night gathering at my house. I always get nervous when we invite people over..especially to eat. Cooking and feeding people is an expression of love from me so I want EVERYONE to be happy when they eat my food. Well guess what? These eggrolls were a SMASH HIT! I used the eggroll skins instead of the tortillas and they turned out perfect just the way they were suppossed to be!. I love spinach used in Southwestern cooking and all my guests were pleasantly suprised with the spinach in the eggrolls. Thanks for the great recipe!
