Jalapeno Jelly

Reviewed: Nov. 6, 2011
Delicious and very easy to make. I put all 16 peppers in the blender (in small batches) until finely chopped. As suggested, I used 6 cups of sugar, and I put in 1 TBLS butter before adding the Certo. I didn't strain. It actually set up too much and was a little too sweet for my liking. Next time I will use 5 cups sugar and just 3 oz Certo. Great recipe and wonderful way to use those extra peppers from the garden!

Ham and Green Bean Casserole

Reviewed: Nov. 29, 2010
We thought the flavor was very satisfying and a great way to use leftover ham. We used the suggestion of using 2 cans of beans and liked it, but thought that an additional can of cream of celery soup would have made the dish more moist (balancing out the amount of rice), so we'll do that next time. We will make it again! Second time around: We preferred this version over my first. Changes from originally posted recipe: 2 cans green beans (drained), 1 can cream of celery soup AND 1 can cream of chicken soup (undiluted), 3/4 cup milk, 1 tbls Worcestershire. I baked it in a 9 x 13 inch glass baking dish. This seems to be a nice balance of flavors and moisture. It made two meals for the two of us. Good warm meal on a cold evening.

Snert (Split Pea Soup)

Reviewed: Mar. 10, 2014
This soup had a very pleasant flavor...even though I didn't have all the right ingredients. I had a VERY meaty ham bone in place of the ham hock, no bacon, no leek and no sausage. But I followed the recipe with everything else. The peas were soaked overnight prior to putting them into the slow cooker. The ham bone was cooked for the first 6 hours after which time I took it out and let it cool to remove the meat...adding the meat back into the cooker. At the very end, I used my immersible blender and gave it a few swirls to thicken the soup up a bit. I never had to add any additional liquid. Served with home made corn bread, and it made a delicious winter meal. I hope to have sausage on hand next time! Thanks for sharing!

Slow Cooker Beef Vegetable Soup

Reviewed: May 31, 2012
This is a wonderful base for whatever it is you like to have in your soup. I don't do canned carrots or potatoes, so I used fresh and added some water to make up the difference for the missing liquid. I also had some leftover veggies and beef stock in the freezer that I added. The husband loved it. There's enough for another two meals for the two of us (which I will freeze). Served with biscuits, but it would be good also with cornbread. Thanks for sharing your recipe...will definitely make it again!

Spanish Rice Bake

Reviewed: Nov. 14, 2011
Awesome recipe exactly as written with the following direction clarification: at #2, bring all of the ingredients to a boil and COVER; reduce heat to simmer for 30 minutes WITHOUT stirring. We loved the flavor!!! Cooked the whole thing in a 10 inch cast iron skillet with high sides...only one pot to clean. It's a keeper recipe!

Swanson® Roasted Chicken with Caramelized Onions Soup

Reviewed: Jan. 6, 2011
Yum!! This is a great soup...quick and easy too! I opted for the 6 cups of broth and it seemed just right, and I caramelized the onions in the same saucepan. All the other ingredients I kept the same except I used Rotini pasta. Will definitely make again!

Slow Cooker Carnitas from Old El Paso®

Reviewed: Feb. 2, 2013
I give this 5 stars for flavor and ease of preparation, but I didn't like using the juice from the pot; it was too runny. Next time, I'd try a fresh can of enchilada sauce or maybe try mixing the juice with some tomato paste...something to give it body so there isn't juice running out of the tortilla. I'll make this again though; we loved the flavor!

Slow Cooker Beef Pot Roast

Reviewed: May 24, 2012
I used a 3 lb rump roast (had on hand) and used the rest of ingredients as listed. I didn't have fresh rosemary or thyme, so I put 1 teaspoon of each in the mushroom sauce. I cooked it on high for 3 hours and then 4 hours on low...still wasn't fork tender, so I put it on high again for another 1 1/2 hours. Finally started falling apart (it was a pretty thick piece of meat). Taste was awesome, but it did need more salt. Served over egg noodles. Thanks for a great recipe!

Shredded Chicken Tacos

Reviewed: Jun. 14, 2011
Sorry Goya, but I didn't have any of your products. The mixture of flavors was fantastic using the brands I had on hand. For the chicken, I used left over rotisserie chicken. I made the sauce and let it simmer for a while then added the shredded chicken and let it simmer until it cooked down. Garnished with our favorite taco toppings and served with refried beans. Excellent and easy meal~much better than the "taco seasoning packet" from the store which I was wanting to avoid!

Calico Bean Casserole

Reviewed: Jul. 24, 2012
We LOVED this recipe. Followed the recipe almost to the T...I did cook the bacon by itself, and sauteed the onion with 1/2 of a chopped red pepper. I would consider this a main dish. Husband said to put it on the list!

Slow Cooker Swiss Steak

Reviewed: May 4, 2012
Wonderful flavor!! I followed the recipe except to add a heaping teaspoon of minced garlic and I didn't have quite enough carrots. My meat was probably closer to 2 pounds, but browning the meat was key I think. It made an awesome gravy without having to do anything to it...just serve it up over mashed potatoes! We'll be doing this recipe again. Thanks!

Slow Cooker Ham

Awesome! So simple and easy...and it leaves the oven free for other things! I think it tasted just as good as an expensive honey baked ham using a .99 cent/lb ham.

Slow Cooker Baked Potatoes

Reviewed: Nov. 17, 2011
These were OK and I'll do them again if I don't have room in the oven. It is convenient to just put them in and not have to think about them. But, the skins were moist, not dry and crispy like we like them to be.

Mom's Applesauce Pancakes

Reviewed: Nov. 13, 2011
We really liked these pancakes! I used Snoqualmie Falls Lodge Pancake & Waffle Mix, cut the cinnamon in half because my home made applesauce already had cinnamon in it, and used just 3/4 cup applesauce because that was all that I had that was thawed out (I freeze my applesauce). I started with 1/2 cup milk, but had to add more because the batter was too thick. It's a personal preference as to how you like your batter; just adjust the amount of milk you use. Thanks for a great recipe!

Country Brunch Skillet

We loved this simple, easy breakfast dish. Cubed hash browns would probably been a little bit better than the shredded ones that I had on hand, but it still worked out great.

Bacon Cheese Frittata

Reviewed: Jan. 2, 2011
This recipe is awesome...and versatile!! I didn't have any bacon, so I used Brown & Serve sausage (cooked and cut into small pieces). And from other reviewers, I added 1/4 cup chopped green pepper and 1 Roma tomato...and way more than 1 cup cheese! Just my husband and I ate almost the whole dish w/English Muffins (but we're ranchers and eat big breakfasts). Definitely a keeper and will be used many times when we have overnight guests. Thanks Diana! UPDATE: Made this again this AM and added 1 cup frozen shredded hashbrowns, which was a nice touch. My husband liked it better with the potatoes in it...I like it both ways!
