Shepherd's Pie

Reviewed: May 2, 2012
The flavor of the ingredients was really very good. I adapted the recipe to my slow cooker, which didn't work out too well. It ended up being more of a soup/stew! But it tasted great!

Easy Mexican Casserole

Reviewed: Apr. 18, 2012
This recipe is quick and easy to fix; the flavor is great! I followed the recipe, and my casserole came out a bit dry. I think next time I'll NOT drain the chili beans and NOT simmer quite so long. My husband loved it, and it was good the next day too for left overs.

Bread Machine Rolls

Reviewed: Apr. 6, 2012
These rolls were excellent even though my yeast was expired by over a year! The only thing I had to change was to use 1 1/4 cup 2 percent milk instead of the water and powdered milk because I didn't have any powdered milk. After my bread machine did its thing, I formed the dough into 6 sandwich rolls. It took them 60 minutes to rise again, but that was probably the fault of the expired yeast. When done, I coated them with butter instead of the egg wash. Delicious for pulled pork sandwiches!!! Thank you for the recipe!

Spicy Tortilla Roll-Ups

Reviewed: Mar. 23, 2012
These were very good and easy to make. I didn't have any pimento, so just went without them. My guests devoured them! Thank you!

Cabbage, Potato, and Tomato Soup

Reviewed: Mar. 23, 2012
This was fantastic! The only changes I made were to use 2 14oz cans of plain diced tomatoes (who wants to cut up whole canned tomatoes) and added 2 teaspoons of basil. For our taste, I'll probably cut back on the hot sauce to 1/2 teaspoon next time. But the soup was thick, really flavorful and super easy to make! Served with Mayonnaise Biscuits from this site and it was a meal. Thanks! UPDATE: 3/2014 I used the corned beef stock (strained) in place of some of the water. There was 2 1/2 cups stock. I sauteed the onion, celery and garlic until the onion was translucent and threw everything except the cabbage in the slow cooker on high for 6 hours. 1 1/2 hours before the done time, I added the cabbage. It was delicious and a nice way to use up the stock.

Irish Potato Casserole

Reviewed: Mar. 18, 2012
I didn't care much for this even though all of the ingredients sounded like the makings of a perfect recipe. The potatoes turned a grey dead looking color.

Really yummy...and oh so simple!! Soft, flaky and flavorful...easy to half the recipe for just the two of us. Will definitely make again!

Hamburger Steak with Onions and Gravy

Reviewed: Feb. 28, 2012
LOVE this recipe. But a double batch of gravy is a MUST!! I didn't have any cooking sherry, so just went without and it was still awesome. I sauteed the onions first and set them aside, then browned the patties and set them aside to make the gravy. I think I made my patties too thin and I just made six; I'll plump them up more next time. Husband says to put this one on the list! Thanks for a wonderful, comfort food recipe~

Mostaccioli with Spinach and Feta

Reviewed: Feb. 26, 2012
Very tasty. I used 2 cans of diced Mexican tomatoes in place of fresh tomatoes. Also added shrimp meat, but chicken or some other meat would have been good. This was a nice all in one meal.

Honey Roasted Red Potatoes

Reviewed: Feb. 22, 2012
Awesome! I sprinkled salt on the potatoes before putting on the honey mixture, and I used 3 tablespoons of honey. Everything else was done as written...super easy to make and it wasn't too much of a clean up either.

Spicy Lemon Pork Saute

Reviewed: Feb. 22, 2012
My husband and I both thought this was a wonderful blend of flavors. I made the recipe as written, but just used 2 chops that were about 1 inch thick. The Man said to put the recipe on the list!

Rice with Herbes de Provence

Reviewed: Feb. 22, 2012
Wonderfully easy in the rice maker. I used another reviewers suggestion of 1/2 tesp of sage, basil, marjoram and thyme. Also put in a pat of butter. Definitely a keeper.

Slow Cooker Ham

Reviewed: Dec. 22, 2011
Awesome! So simple and easy...and it leaves the oven free for other things! I think it tasted just as good as an expensive honey baked ham using a .99 cent/lb ham.

Paprika Chicken with Mushrooms

Reviewed: Nov. 18, 2011
My husband mentioned to me twice that this was a keeper recipe...guess he liked it! I prepared it exactly as written but used about a 1/2 tesp of garlic, and it was very easy. Our home grown Walla Walla Sweet onions were key. Yes, the juices at the end were thin, and I suppose lightly flouring the chicken before cooking them would eliminate that. But the mixture of flavors was excellent. Thanks for sharing~

Slow Cooker Baked Potatoes

Reviewed: Nov. 17, 2011
These were OK and I'll do them again if I don't have room in the oven. It is convenient to just put them in and not have to think about them. But, the skins were moist, not dry and crispy like we like them to be.

Spanish Rice Bake

Reviewed: Nov. 14, 2011
Awesome recipe exactly as written with the following direction clarification: at #2, bring all of the ingredients to a boil and COVER; reduce heat to simmer for 30 minutes WITHOUT stirring. We loved the flavor!!! Cooked the whole thing in a 10 inch cast iron skillet with high sides...only one pot to clean. It's a keeper recipe!

Mom's Applesauce Pancakes

Reviewed: Nov. 13, 2011
We really liked these pancakes! I used Snoqualmie Falls Lodge Pancake & Waffle Mix, cut the cinnamon in half because my home made applesauce already had cinnamon in it, and used just 3/4 cup applesauce because that was all that I had that was thawed out (I freeze my applesauce). I started with 1/2 cup milk, but had to add more because the batter was too thick. It's a personal preference as to how you like your batter; just adjust the amount of milk you use. Thanks for a great recipe!

Homesteader Cornbread

Reviewed: Nov. 7, 2011
Good flavor and moist. I used the electric mixer on low for 5 minutes and it wasn't dense; it had good texture. I didn't realize how much it made though. Next time I'll cut the recipe in half!

Jalapeno Jelly

Reviewed: Nov. 6, 2011
Delicious and very easy to make. I put all 16 peppers in the blender (in small batches) until finely chopped. As suggested, I used 6 cups of sugar, and I put in 1 TBLS butter before adding the Certo. I didn't strain. It actually set up too much and was a little too sweet for my liking. Next time I will use 5 cups sugar and just 3 oz Certo. Great recipe and wonderful way to use those extra peppers from the garden!
