Leftover Pot Pie

Reviewed: Nov. 26, 2012
So simple, yet very tasty and filling! I think the key to this is good gravy. If the gravy is awesome, your pot pie will be just as awesome. High altitude: set temp at 360 degrees and baked for 1 hr 10 min.

Juicy Thanksgiving Turkey

Reviewed: Nov. 26, 2012
Had to give this recipe 5 stars even though I didn't prepare it exactly as written. My friend had already made her favorite stuffing (a very meaty stuffing with crasins). But, I believe it's the roasting process that is the key! We used 1/2 the amount of spices, stuffed the turkey, poured in the champagne and broth, and wrapped as directed. Done in 4 1/4 hours at 360 degrees (high altitude). AWESOME!! Thank you!

Yummy Yam Casserole

Reviewed: Nov. 26, 2012
Yep, it was a winning recipe at our Thanksgiving table. Made the recipe exactly as written. I preferred the pecans to be crushed into smaller pieces. Thanks for sharing!

Jay's Signature Pizza Crust

Reviewed: Nov. 19, 2012
Easy, tasty and affordable! The only thing I did different was to partially bake the crust (10 minutes) before adding the toppings. Will definitely be making pizza more often using this crust!

Apple Pie by Grandma Ople

Reviewed: Nov. 5, 2012
Delicious! Made almost exactly as directed, but didn't have time to make the lattice top, so just did a full pie top with slits and brushed a bit of the butter/sugar mix on top. Eight apples were about 2 apples too many for my pie plate, but I made a half a batch of apple crisp the next day with the left over apples. Thanks for sharing the recipe!

American Frittata

Reviewed: Oct. 21, 2012
I made the recipe to the T, but cut it in 1/2 for just the two of us. Using a 10 inch cast iron skillet, the cooking times were right on. For the full recipe in a 10 inch skillet, it may take a bit longer. I did put it under the broiler for a minute to brown up the cheese just a bit. Great base recipe that you can adjust to fit your tastes by adding more veggies etc. Bacon would taste too. Served with fresh, home-grown tomatoes and an English muffin. Yum!

Quick and Easy Green Chile Chicken Enchilada Casserole

Reviewed: Oct. 8, 2012
Good flavor!! I used left over meat from a roasted chicken (cut the recipe in 1/2 for just the two of us) so, it was 2 cups cooked chicken. Followed the recipe ingredients, but mixed the sour cream with the chicken and soaked some of the tortillas in the green chili sauce. I did not cook the tortillas. Served with garden fresh tomatoes, a sliced avocado and some refried beans. Great meal!!

Honey Fruit Salad

Reviewed: Oct. 4, 2012
This is so easy and tasted wonderful!! As with anything with fresh fruit, it needs to be eaten right away so the fruit doesn't get mushy.

Mexican Potato Nachos

Reviewed: Oct. 4, 2012
These were VERY good. Made recipe just as written. A very nice change from the tortilla chip nacho. I used too much oil and my potatoes didn't brown, so I put them under the broiler for a few minutes.

Love this just as written...simple and really tasty. I like to add a little bit of chopped onion to the zucchini and serve with chopped tomatoes on top. Thanks for a great recipe!

Calico Bean Casserole

Reviewed: Jul. 24, 2012
We LOVED this recipe. Followed the recipe almost to the T...I did cook the bacon by itself, and sauteed the onion with 1/2 of a chopped red pepper. I would consider this a main dish. Husband said to put it on the list!

Bacon Ranch Chicken Skewers

Reviewed: Jun. 5, 2012
These were delicious and easy...just a lil' bit time consuming getting the meat and veggies on skewers. I would use thinner bacon next time and really loosen up the chicken and bacon on the skewer...I didn't care for the soft bacon...prefer mine more well done. The chicken was awesome though!

Slow Cooker Beef Vegetable Soup

Reviewed: May 31, 2012
This is a wonderful base for whatever it is you like to have in your soup. I don't do canned carrots or potatoes, so I used fresh and added some water to make up the difference for the missing liquid. I also had some leftover veggies and beef stock in the freezer that I added. The husband loved it. There's enough for another two meals for the two of us (which I will freeze). Served with biscuits, but it would be good also with cornbread. Thanks for sharing your recipe...will definitely make it again!

German Pancakes II

Reviewed: May 24, 2012
I used the calculation for 2 servings and preheated my 8 inch cast iron skillet in the oven at 400. Melted the butter in the hot skillet and added the pancake mixture which included a little bit of sugar, nutmeg and cinnamon. It was done in about 17 minutes...and gorgeous!!! I used to make these all the time as a kid...thanks for bringing back the memories~

Yum!! I used the comments by KitchenDiva for ratio of ingredients and method. I made it with two eggs just for myself. Can't wait to make it again on the weekend for the husband. Thanks!

Slow Cooker Beef Pot Roast

Reviewed: May 24, 2012
I used a 3 lb rump roast (had on hand) and used the rest of ingredients as listed. I didn't have fresh rosemary or thyme, so I put 1 teaspoon of each in the mushroom sauce. I cooked it on high for 3 hours and then 4 hours on low...still wasn't fork tender, so I put it on high again for another 1 1/2 hours. Finally started falling apart (it was a pretty thick piece of meat). Taste was awesome, but it did need more salt. Served over egg noodles. Thanks for a great recipe!

Wonderful Short Ribs

Reviewed: May 22, 2012
Yummmm! I adapted this to my slow cooker. I used crushed tomatoes because I had them on hand, and reduced the pepper flakes to 1/2 teaspoon (plenty of spice for our taste). I roasted the ribs in the oven at 350 for 45 min then transferred them to the slow cooker. I then sauteed the onion rings in some of the grease from the meat along with the scraped brown stuff from the oven pan and 2 teaspoon minced garlic. I put the onions over the meat and the heated sauce over the onions. Cooked on low for 8 hours, then it sat on warm for another 2 hours. Served over rice. Awesome taste and tender, moist meat!!

Boiled Tongue

Reviewed: May 15, 2012
I only boiled with salt, but will add garlic, bay leaf and onions next time. Wish I could remember what my mother used for seasoning, but it wasn't much more than salt I believe. I boiled the tongue for three hours then put it into cold water for a few minutes before removing the outer skin. Then sliced it into 1/4 inch pieces. Then I roasted 8 slices of the meat with four quartered potatoes and some carrot pieces in a dutch oven with 1 cup beef broth @ 350 for about an hour; made gravy from the drippings left in the pan...great dinner!! My husband and I were both raised on farms and beef tongue was a treat. When we ordered 1/2 a beef they gave us two tongues...bonus!!

Slow Cooker Swiss Steak

Reviewed: May 4, 2012
Wonderful flavor!! I followed the recipe except to add a heaping teaspoon of minced garlic and I didn't have quite enough carrots. My meat was probably closer to 2 pounds, but browning the meat was key I think. It made an awesome gravy without having to do anything to it...just serve it up over mashed potatoes! We'll be doing this recipe again. Thanks!
