My husband and I both loved this soup. I used a 4 qt pot, and after putting the potatoes, celery and onion in the pot, 1 cup broth was not enough; I added about 3/4 cup more. Everything else was as the recipe was written (used canned milk though). To mash the potatoes, I used my immersible blender which was perfect. The cream cheese didn't all melt, but it tasted great anyway. I'll cut the cream cheese in smaller pieces next time. Thanks for a great recipe.
