Christmas Breakfast Sausage Casserole

For our personal taste, 1/2 pound of sausage would have been enough. I cooked about 1/4 cup chopped onion with the sausage. Go light on the salt! Increase the egg by one and use one more slice of bread. Cooked in a 7" x 12" pan.

Hot Bean Dip

This definitely makes a lot of dip; a medium bowl doesn't cut it! I used a whole packet of taco mix, added a small can of diced chilies and put most of the shredded cheese into the dip leaving a 1/2 cup or so for the top which I put on for the last 10 minutes of heating. LEFTOVERS!! Let me count the ways: enough for another party, then stuffing for enchiladas, then stuffing for breakfast burritos with an egg...This was good, but next time I will only make HALF a batch!

Slow Cooker Mashed Potatoes

We liked this recipe over another similar recipe on this site. Love how easy this is...and the convenience to have the potatoes done ahead of time on Thanksgiving. I failed to take heed and forgot to stir occasionally...that's a must to keep them from sticking to the cooker. The butter wasn't needed since we were putting gravy on the potatoes. Also, the left over liquid was wonderful for turkey soup!

Bill's Sausage Gravy

We liked it, and the maple flavor is nice for a change, but I wouldn't use this recipe for every biscuit 'n gravy breakfast. Next time, I'll try it with regular breakfast sausage.

Taco Seasoning I

Excellent flavor...much better than the packets from the store. Just need to make big batches to have it on hand. 2 tablespoons seasoning mix mixed with 1/2 tablespoon flour sprinkled over the browned meat and some onion...add 2/3 cup water...stir well and let simmer.

Absolutely Ultimate Potato Soup

Yes, this recipe takes MUCH longer than "ready in 40 minutes" !!!!!!!!! I just made half a batch for the two of us, and it was very thick. I should have added more stock, but it was late in the evening and we needed to eat. I will adjust next time. I also made this in my cast iron, which I won't do again either. Very filling dinner with some fresh baked biscuits. Thanks!

Garlic Top Sirloin Pot Roast

We enjoyed the flavor very much...and it was quick and easy to assemble. I didn't have any green pepper, so we just skipped that part. The left over broth went into the freezer for a beef soup.

Slow Cooker Beef Stew I

I followed the recipe and directions as written except used a packet of onion soup mixed in 1 1/2 cups water in place of the beef broth. Corrine's suggestions sound good, but I didn't have time for that. My husband and I both loved the flavor and the stew gravy was just right. It cooked on low for 10 hours and on warm for another hour. I wished I had a good fresh, crusty bread to soak up the gravy! Next time I will~

Pasta Salad with Homemade Dressing

Everyone liked this recipe. Changed a few veggie ingredients to what I had on hand, but this recipe is great to be able to make changes to particular tastes. I do think I'll double the dressing next time...but the dressing had great flavor!

Sweet Polish Sausage

We loved the flavor of this recipe. I followed DC in TX's suggestion and just put everything in the slow cooker after boiling the sausage for 10 minutes. An hour before eating, I mixed in about 2 tablespoons of cornstarch mixed with some water to thicken up the juice to serve it over rice. The only thing I would do different would be to saute the onions before adding them in; even after 8 hours, they were still crunchy, and we prefer a soft, cooked onion. Someone else mentioned pineapple juice and chunks...sounds like a nice idea too! Great versatile recipe.

Slow Cooker Chicken Pot Pie Stew

It was a very good "all in one" meal. Had to make some changes because of what I had on hand. I used four skinned leg quarters and put them in the bottom of the cooker. In a large bowl, I mixed all of the other ingredients (changes were: 2 lbs red potatoes, 1 cream of chicken, 1 cream of mushroom, 1 chicken bouillon cube, 1 teaspoon pepper). All of the other ingredients used were as listed. After 5 hours I added 1/3 bag of mixed veggies because that was all I had. It still turned out wonderful. I think using 2 cans of cream of chicken would be better than what I did. Love the quick convenience of the recipe!

Debdoozie's Blue Ribbon Chili

I've made this two different ways; original as written which is awesome and easy!!! The second way was for a batch and a half. I added 1 lb Italian sausage, a can of black beans and the Pace Picante sauce I used was mild, so I added 1/8 tesp ground cayenne pepper. All other ingredients were the same with the amounts adjusted for 12 servings. RAVE reviews from everyone at the potluck that day and the pot was empty!

Simple Slow Cooker Meatloaf

I have to give it a 5 star because I didn't follow the recipe...I used what I had on hand. Used 2 lbs ground beef and only one egg (everything else was the as the recipe listed. I put carrots on the bottom of the slow cooker and it cooked nicely keeping the meat out of the grease. I intend to try it with sausage, but I also think it needs onions and more than just ketchup for the topping. The way I made it, it was a bit dry. Easy, quick recipe to put together and nice after a day at work.

Pineapple Upside-Down Cake II

I had a pineapple that was slightly over-ripe and thought maybe making a cake would be good before it went bad. Searched and found this recipe which was quite simple. I followed the directions (didn't read a single review), but forgot to add the vanilla. I used a 11 1/2 x 8 1/2 pan. Bake time could have been less than what I set it for (but we were branding calves and couldn't get back to the house in time to test), but it did fine with 50 minutes. After reading reviews, I think I agree that the amount of butter could be reduced, but as written, this recipe is still a winner. Thanks!

The Best Bean and Ham Soup

This is definitely not your Grandma's bean soup...what a nice change! I couldn't stay home for the day, so I used my largest slow cooker...and I knew that everything would not fit. I cooked the beans on the stove for 2 hours, drained and put into the pot. I cut back on the carrots and the ham (my ham bone was very meaty anyhow) and the broth. I filled the pot with all of the spices, celery, onion, tomato, etc. just as listed and filled it to the top with chicken broth and let is cook on low for 10 hours. I took out the bone and added in about 2 cups of water and let it cook on high for about an hour. I used my submersible blender and whipped up some of the beans, but left it so it was still chunky and was just how we like it as far as thickness. EXCELLENT flavor!! Will definitely make this again.
