Fall and winter leave me time to enjoy some baking and making dinners that take a lil' more time to prepare. The slow cooker is my best friend.

Salsa Chicken
These were wonderful and easy!! I used five skinless bone-in thighs that I had on hand and followed the recipe. I baked them at 385 degrees for about 50 minutes to reach the correct temp (high altitude). The husband loved them! Served with my Mexican rice recipe and corn. Great week day meal...but could be used for guests as well.

Sesame Pasta Chicken Salad
This really has wonderful flavor!! I made the recipe as written except to reduce the oil to 1/3 cup and I used light olive oil. 5 stars for a great recipe!! But, my husband and I both agreed that it need more veggies! So, I added fresh peas from the garden, sliced carrots and sliced celery to the left overs the next day. I think any Asian style veggie would be good...broccoli, cabbage etc. We'll definitely make this again...perfect for using up left over roast whole chicken! And, it's filling enough to use as a main course with crusty bread.

Marinated Flank Steak
This was awesome...'nuf said. Followed recipe exactly...wouldn't change a thing! Adjust grilling time to the thickness of the steak.
