I didn't have bread flour, so used 1 cup oat flour and about 2 1/2 c AP flour. Like another reviewer, I added more yeast to make up for the lack of protein in the flours. Everything else was the same, but I think 1 additional tsp of salt and 1 more tbs of sugar would have helped (because of the oats). I'm a novice bread maker, and this is recipe was a great success for me. It is crusty on the outside, but light and fluffy in the middle! Highly recommend this recipe.
