Cheesy Ham Potato Bake

As written I would have to give this recipe 4 stars, there is just not enough flavor for us, but I can see it being very appealing to families with little ones! I omit the butter (both for health reasons and because it's a bit oily), shred 5-6 medium potatoes, sub cream of mushroom soup and use an extra sharp cheddar cheese, add a little bit of chipotle powder, diced dried garlic, and lots of freshly ground pepper. I cook it in the crockpot on low for about 6-7 hours or on high for about 4. Sometimes I add some frozen peas about 1/2 way through cooking just to get some more veggies in. It develops a nice crispy crust on the bottom and sides cooking it this way. Total prep time (including shredding the cheese and potatoes is still about 10 minutes). Overall a great adaptable recipe!!

Sweet Potato Enchiladas

I think it would be better if you cubed the sweet potatoes rather than mashing, just to give it a little texture. I'd like to try it with green enchilada sauce per other reviewers next time. Overall it was a good and different way to prepare sweet potatoes!

I baked them for around 20 minutes at 375, turning them over halfway through the baking time, but other than that followed the recipe exactly. Served over pasta with the sauce and mozzarella for an easy and quick meal!

Seven Layer Tortilla Pie

I think next time I will just use fat free refried beans instead of mashing the pintos. It was good, but kind of a PITA. I added some fresh garlic to the pintos and I highly recommend the addition. A very pretty presentation and tasted even better as leftovers!

Tempeh Reuben

These were just ok as the recipe was written. I had leftovers the next day and they were phenomenal! Next time I think I will marinate the tempeh in the sauerkraut juice before cooking. It definitely adds something to the flavor!

Delicious Black Bean Burritos

Looking at the recipe and reading the reviews I didn't think we'd like it as much as we did. Didn't cook the onions and peppers as much as recipe stated so there was a little crunch, so very good! The cream cheese really adds a great creamy flavor.

Jamaican Burgers

This recipe is incredible! We added fresh tomato slices and a little bit of mayonnaise to the sandwiches. It definitely made more than the recipe stated, we made 8 good sized patties. The leftovers were incredible, will be making this again!
