Blueberry Zucchini Bread

Reviewed: Sep. 20, 2014
Tried this recipe as is the first time and it was a huge hit at a morning tailgate! Made it many times since and try different variations on spices & berries. It's a no fail recipe no matter what I do to it. Love it!

Cream Filled Cupcakes

Reviewed: Aug. 29, 2014
This makes an amazing cupcake filling! I did not try the chocolate cupcakes but I made the filling for my vanilla cupcakes this week. Fantastic! Held up well and as a few others have said, was even better after sitting for a day. I died my filling pink for a little girls' party and they loved it!

Brownie Frosting

Reviewed: Aug. 29, 2014
Unbelievable! Used this to dress up a plain old box of brownies and the result was delicious! I got many more servings than usual out of a 9x13 pan because it made them so sweet and rich! I will be trying this again for sure! Next time will scale down the sugar or use unsweetened chips and see if it makes it slightly less sweet.

Special Buttercream Frosting

Reviewed: Jul. 24, 2014
This is the first homemade buttercream recipe that I tried that turned out perfectly the first time. I have used it on probably 50 projects throughout the past year and I could not ask for a better result each and every time. Some days I have tweak the sugar/liquid ratio depending on the temperature in my house that day but it still works like a charm!

Ooey-Gooey Cinnamon Buns

Reviewed: Mar. 2, 2014
I am a novice when it comes to working with yeast and this was only the 4th or 5th I've tried. Followed this recipe to the letter except I sprinkled a little extra cinnamon on top at the end (only had a few sprinkles left to use up in the jar and figured it couldn't hurt...it didn't) We made these the night before and left them in the fridge. Took them out to warm and rise about 2 hours before putting them in the oven. Honestly the most amazing sticky rolls I've ever had! My 7 year old said "This is the best thing that ever happened to me!" My 8 year old has been BEGGING for more since breakfast. And my 5 year old at a huge roll without saying anything...which is huge as she complains about EVERYTHING I make! Awesome recipe and will definitely be trying again and again!

Crazy Cake

Reviewed: Jan. 27, 2014
The first time we made this recipe as is and it was delicious but a giant pain to get out of the pan. We lost half the cake to sticky pan syndrome :) We have since tried it a few more times and so far our favorite enhancements are to use 2 cups of brewed cold vanilla or hazelnut coffee instead of water and toss in a handful of chocolate or peanut butter chips. We also mix the dry ingredients in a bowl and then add the wet. This allows us to grease the pan well.

Simple Baked Apples

Reviewed: Jan. 26, 2014
What a great recipe and so easy to play with! Made this yesterday as is and the kids loved it! Today we made it again and modified it a bit just for fun. We used brown sugar instead of white and cut the amount in half. We also omitted the nuts and added 3 slices of cooked & chopped applewood smoked bacon and served with porkchops. AMAZING!

Slow Cooker Oats

Reviewed: Nov. 16, 2012
Super easy, yummy, and good for you! I used half water/half milk and cooked this during the day so I could monitor it the first time. In my crockpot I cooked it on low for 5 hours and then turned it to warm for the next 2 hours to keep it from getting overly mushy. There isn't a whole lot of flavor in it but each member of my family doctored their bowl up in a different way using bananas, brown sugar, maple syrup etc... to suit their own tastes. Made a double batch and froze some in single portions for my husband to take to work in the morning. I was surprised at how well it reheated! Overall a healthy and very easy recipe the whole family enjoyed. My only suggestion....USE A CROCKPOT LINER! After seeing the shape of my crockpot liner after this recipe, I was reeeealllly happy I used one!

Chicken-Parmesan Bundles

Reviewed: Oct. 14, 2012
Tried a slightly altered version of this last night and YUMMY! I added chopped up pieces of cooked bacon, garlic, & sundried tomato. I had no Ritz so I used panko bread crumbs. Once it was all cooked through, I topped the chicken with a bit of the sauce and a handful of mozzarella and baked it for a couple of minutes more and served it over whole wheat angel hair pasta. It turned out AMAZING! The entire family loved it. Planned on leftovers for lunch today but there wasn't any left!

Easy Spinach Lasagna

Reviewed: Sep. 29, 2011
I admit to being nervous about using uncooked noodles but they turned out perfect! Only change I made was substituting half the cottage cheese with ricotta simply because I ran out of cottage cheese :) Awesome recipe!

Kimberly's Meaty Meatloaf

Reviewed: Apr. 23, 2010
I work at a small restaurant and used this recipe for my 'nightly special' tonight. It fell apart a little during the baking process but the taste was fantastic! Customers sent back rave reviews! The only thing I did different was use a garlic/italian season in my breadcrumbs. Thanks for the great recipe!
