Red Lentil Curry

I loved it. A guest really liked it. My husband thought it was okay but would prefer we try it next time not pureed. My daughter thought we should feed it to her baby sister. Will make it again. Perhaps w/ a bit more lentil if not pureed.

Roasted Garlic Cauliflower

Our new favorite way to eat cauliflower. I baked a head of cauliflower at 450 for 25 minutes; skipped broiling. Tasty.

Peanut Butter Cup Cookies

We made 1.5 batches, except we only used 1 c. sugar total instead of 1.5 batches (1.5 c) of sugar). Using the melon baller that we use for all drop cookies and standard "roll into ball" cookies we got 40 cookies (rather than the expected 60 for 1.5 batches). Very tasty and sweet even w/ less sugar.

Roasted Butternut Squash and Garlic Lasagna

Tasty but very rich. One slice per person is definitely adequate. We used 1/2 and 1/2 instead of whipping cream (so no layer or cream on top) and used mozarella cheese (because that's what we had on hand). Tasty. Big hit at Thanksgiving feast.

Chocolate Muffins

We made dark choc cake muffins and used applesauce and a little less sugar. My family LOVED them. They could easily pass for cupcakes or dessert muffins (not something I'd serve for nutritional value). Will make again.

Iowa Maid-Rites

This is our new favorite maid-rite recipe. I'm from IA and must say that this reminds me of home. We don't stock our pantry w/ soup mix so we substituted fresh onion & garlic, salt, pepper and a little chicken stock. Delicious!

Tropical Grilled Chicken Breast

The chicken was moist and flavorful. Next time we'll make a larger batch of marinade and substitute some marinade for part of the water required to make a batch of (brown) rice. The meal was a 3 due to less intense flavor. With more flavorful rice (than plain rice served with flavored chicken) we'll likely give the full meal a 4 or 5.

Grilled Pizza

After reading several recipes, we followed the grilling directions of this one. The pizzas were a hit! We used our standard homemade dough for a 16" med. crust pizza, divided into 6 parts and made mini pizzas. 3 had red sauce, 3 had pesto sauce, all had chicken, 2 had sauted shredded zuchinni, 2 had dried tomatoes. The pizzas w/ zuchinni were fabulous! Pizzas w/ chicken and sauce were good. The outer edges of crusts w/ chicken and dried tomatoes were a bit crisp - will try cooking 2 min (not 3) then adding toppings. Will definitely use the grilling recipe again.
