Master Pizza Dough

Spinach Lasagna III

I was looking for a recipes that would satisfy both vegetarian and meat eating family members. This was a hit. I made it just as directed with one exception - I threw baby fresh spinach on the hot mushroom mixture and it steamed beautifully. Lasagna takes a lot of work and this one is worth the effort.

Oven Fried Chicken II

Made this as per the recipe and really liked it. I used panko breadcrumbs and seasoned it myself. I also put the pan in the oven to heat the oil then placed the thighs skin side down for the first 30 minutes. I turned them skin up for the last 30 turning up the heat to 375 for 10 minuites. Crispy - not greasy. I'll make this again.

Home-Style Scalloped Potatoes

Half recipe with thinly sliced redskins layerd with raw onion (made it really sweet). Added crushed garlic as a reviewer mentioned. Sauce tighted up perfectly with 75 minutes of cooking and 15 minutes standing time after removing it from the oven. Good recipe. I can see how you could easily modify this for a main dish. I will make this again.

Italian Restaurant-Style Salad Dressing II

Basically good. My adjustments were 1/2 basalmic vinegar 1/2 white wine vinegar, honey instead of corn syrup otherwise I followed the recipe. Just the right amount of italian seasoning.

Sour Cream Corn Bread

Moist, tender corn bread. I did not add pimento and onion but would have been good in this savory bread. Or corn and hot peppers. I will make this again.

Blender Hollandaise Sauce

OK. I have always made traditional hollandaise and not often because I was afraid of it not turning out. Well, never again. This was so easy and so quick. I read the reviews and let the butter get very hot and bubbly. I also used my immersion blender instead of the standard blender. I served it with baked fish and there is plenty left over. Yum.

Caramelized Baked Chicken

This was really good. I used thighs because that is what I had. Next time I will reduce the heat a bit (may be my oven) because they slightly passed caramelized to burned. Served them with spicy sesame noodles for Chinese New Year.

Pastitsio II

I made this for Christmas Eve dinner at the request of my daughter. My kids are half Greek and both love Greek food made by their late YiaYia. I have taken up the traditon but I am not Greek so I am happy when my food passes the "YiaYia" test. Everyone loved this. A very yummy, filling and economical dish. Served it with Greek salad and crispy bread.

Southern Pimento Cheese

My husband is Canadian but has a limb of family from Tennesee and Georgia. He longs for his grandmother's southern cooking and this recipe is on the money. Now if I can master southern fried chicken. . .

Cream of Mushroom Soup

Very simple, very yummy. A quick meal when you're home late on a snowy evening. I blended a small amount with the imersion blender for a deeper consistancy. The thyme was perfect.

Curried Rice Pilaf

Friday night dinner and not wanting to go out for ingredients. This was a great solution. Very good tasty and flexible to changes with what's in the pantry. My substitutions were chopped, dried apricots for raisins and cashews for almonds. Next time I will use almonds - a bit more crunch. I will make this again.

Authentic German Potato Salad

Taste was wonderful but I used a waxy, red potato (skin on) that just didn't soak up the sauce. Next time I will use a russet cooked in the skin then pealed. I think the texture will be better.

Golden Potato Soup

I have been making potato soup since I learned how to make it in 8th grade home ec. Lots of variations. This was one was so tasty and so straight forward. Made two changes because of pantry limitations. Cheddar for American, bacon for ham. I was hoping for leftovers for my next day lunch day, but no, not a drop left. I will try it again with ham.

Jumbo Fluffy Walnut Apple Muffins

These are delicious. Rich, moist, and yummy. I made them exactly as the recipe instructed and admred the finished product of jumbo muffins. Then I looked at the calorie count. Over 600 calories per muffin. I will make them again but as regular size or even minis. I couldn't finish the jumbo anyway and a mini would have been perfect. I think smaller muffins would have come out of the pan more easily, too.

Amish Meatloaf

Interesting departure from traditional recipe. Very sweet. The crackers gave it a richness that gave some balance to the sweet. The glaze was great. The bacon was a nice addition. Next time I will eliminate the brown sugar in the meat. Just a bit too much sweet for my families taste. I must admit though, I kept slicing off "one more little piece"! It must be addictive!

Who knew something this good could be this simple. Try it as written before you try variations. I did use butter because that was what I had. The onion powder and celery made the house smell great. Very juicy chicken.

Cheddar Cheese Puffs

I can be impulsive when it comes to food. Made 1/2 recioe for breakfast on a whim. Yummy! Use good, sharp cheddar and a good quality mustard. Also, a shake of Frank's hot sauce gave it a bit of zing. I will make these again - maybe for lunch this time!
