Rick's Special Buttercream Frosting

FAB-U-LOUS! Used this frosting most recently to make a 3-D duck cake for a baby shower. It was so easy to work with, and set up nicely. This will be my go-to recipe. Thanks!

Molten Chocolate Cakes With Sugar-Coated Raspberries

The flavor of these was quite good and, compared to a more complicated Emeril recipe, a good efficiency value. A couple of thoughts, though. Peeling the muffin papers off was a pain -- why not just grease & flour (or use cooking spray) in the tins? You could avoid hassle and avoid lines in the side of the mini cakes. I will try that next time. Also, I found the sugar-coated raspberries not that exciting. Next time, I will sift powdered sugar over top, and garnish with in-season fruit without added sugar. Worth trying.

Grilled Flat Iron Steak with Blue Cheese-Chive Butter

The marinade was pretty standard, but good. The blue-cheese-chive-butter, though, is outstanding, and earns this one 5 stars!

Cool Cucumber Salsa

This was pretty popular as a summer appetizer -- the cucumber is a nice addition to an otherwise standard pico de gallo. The volume was way too much, though, to be useable for a regular BBQ at our house, and it doesn't keep all that well. Either halve the salsa, or double the chips and have a really big party!

We had this for dinner tonight, and it was phenomenal! Restaurant-quality flavor combination and perfect for the style of fish. Highly recommend this one.

Delilah's Frosted Cut-Out Sugar Cookies

*LOVE* this recipe! I don't always use the frosting, but sometimes just put colored sugar on the cookies before they go in the oven. They come out great every time!

Fresh Peach Pie II

I've used this recipe many times over the last few years -- typically in August, when we get fresh peaches from the Western Slope of Colorado. The pies are always a big hit, and very easy to make.

Orzo with Parmesan and Basil

Excellent! Served this as a side to rosemary-crusted beef tenderloin, and it was gobbled up. I substituted vegetable broth for the chicken broth, and used prepared squeezeable basil instead of fresh. My only criticism is that the serving size was too small! :)
