Pecan Pie V
I make over 100 pies a year and quite a few are pecan. THIS IS NOW MY FAVORITE PECAN PIE RECIPE. I love the consistancy, the flour helping the filling to set. I only use butter and with the brown sugar, it makes for a delicious filling. I like to use dark brown sugar and only butter with 1 1/2 to 2 cups of pecans. I like to chop my pecans because it helps the pie cut better. Thank you for this recipe. Where have you been all my life????

Pierogi Casserole
I made this and it was a huge success at our Polish luncheon in honor of the Beatification of Pope John Paul II. I did add an extra cup of the shredded cheese only because I had extra. I made 2 recipes and it served 25 people. If it had been the only entree, it would have served less. I didn't know what to expect but it truly was very delicious and VERY rich. I will make it again.

Grandma's Pear Preserves
I think that the people who are having problems are not familiar with the jam making process. NEVER use less sugar than the recipe calls for. To add less will most certainly cause there to be a jelling problem. I mashed up the pears as they cooked. I followed the recipe and it turned out great. I was a little worried at first with the spices but they were just right. Very homey and old timey and just delicious. I think this would be very good on vanilla ice cream during the winter. Thank you for a great recipe. I needed to find a way to preserve an abundance of free pears from my friend's tree.
