Chef John's Turkey Chili

Reviewed: Mar. 8, 2015
The video shows the 1st hour of cooking in step 3 to be in a covered pot but it does not state so in the recipe. The last 20 to 30 minutes, after adding in the beans, is done uncovered. As far as taste, I liked this quite a bit but found the finished flavor to be different than what you would expect and (for me) not quite as good as a basic chili. It may just be that I need to get used to the difference in spices. Anyway, the finished product had a nice (fairly mild) level of heat and the technique that's used cooked everything down to a good thick consistency. I will definitely follow this technique again in the future but not sure about the spice mixture.

12-Second Coleslaw

Reviewed: Feb. 8, 2015
I liked this pretty well. Served it with Chef John's sloppy joes (which is excellent!). I shredded my own cabbage with a little bit of carrot. The dressing has a nice kick to it. Simple and good recipe. Thanks!

Homemade Sloppy Joes

This was really great. I made this one as written and was very pleased at the outcome. It does bring back memories of Mom's Sloppy Joe's. Thanks for another great recipe!

Sweet Potato and Black Bean Chili

Reviewed: Dec. 14, 2014
I made this as written so I could give it a fair review. I liked it but felt like it needs a little tweaking. I'm one of those that usually needs to go extra on spices and herbs so that will be one thing I try next time. All in all, a good healthy chili. I also did not find it too hot at all. Thanks, Chef John, for another good recipe!

Oven-Baked Onion Rings

Reviewed: Feb. 1, 2014
Updated: To get your flour to stick, put your onions rings in a bowl of cold water before coating. Work with one or two at a time, shaking off excess water then toss into your bag of flour mix. This worked really well for me. I ended up with fully coated, crispy onion rings. Old review follows: These were really good for being baked. My flour didn't want to stick well and so I had only partially breaded rings when they were done. That didn't seem to hurt anything, though. They had enough coating to have a good crunch and with less coating, the onion flavor came through nicely. Also less coating meant less calories. I added some powdered garlic and onion to the flour mix. Great recipe!

I hadn't tried making an omelet in a long time but I have a surplus of eggs right now so tried this recipe out. Mine came out perfect, looked just like the picture. Great instructions and recipe.

This was surprisingly good! I made it as written (yesterday) and just gave it a try this morning. Nice combination on the dressing. I will be keeping this one around as a regular. I also want to read the reviews for some alterations to try. Thanks for a great recipe!

I made this as written. It was okay for me. Something I might make now and then but I'm not a big fan.

Meatball Nirvana

Reviewed: Feb. 10, 2013
I cut back a little on the salt and used lean ground turkey and they turned out great. They did stick a bit to the baking sheet, so I would oil the sheet first next time. Great recipe!

Coleslaw with Peas

Reviewed: Feb. 2, 2013
Surprisingly good! I'm not the biggest fan of curry but this amount worked well. A nice change from the usual coleslaw. I used low-fat versions of sour cream and mayo but otherwise made this as written.

Spicy Turkey Sloppy Joes

Reviewed: Nov. 1, 2012
Pretty good! I used a little less turkey and added more vegetables. For the heat, I only had a couple small jalapenos on hand. The sauce was very good. Will be making this one again.

These were good. I did squeeze out the liquid from the shredded zucchini (without salting it) and did up the seasoning some but otherwise made as written. Very good. Thanks for the recipe!

I also used this for chicken tenders and it was pretty good. Tenders take about 20 minutes in the oven.

Great, quick, simple recipe. I used unsalted butter the 2nd time that I made this because the 1st time was just slightly too salty for me.

Refried Beans Without the Refry

Reviewed: Jun. 18, 2011
I made this as written (except halved it) and it turned out great. I drained the liquid after cooking but ended up putting it all back in after mashing. It turned out to be just the right amount of liquid. A great healthy recipe. As good as any "re-fried" beans that I've ever had. I forgot to mention that these were a little on the salty side and I had already cut back a little on the salt when I made them, so, I would cut the salt to half the amount next time. You can always add more later.

I made this as written and thought it was very good (except adjusted quantities for everything for 1-1/4 lbs of ground sirloin). Definitely worth making again.
