Rhubarb Upside Down Cake III

I gave this recipe 4 stars only because I changed a lot of things in it but the end result was definitely 5 stars! Here's what I did. I put in 2 cups of rhubarb with 3 cups of crushed pineapple. I did NOT put in marshmallows. I used the reserved pineapple juice in the cake mix instead of water. I have 4 kids (8 years old and younger) who loved this recipe. They loved the red glaze on top. And had me make it for their slumber party. 2 of the kids at the party told me they hated rhubarb but loved my cake. I'm definitely going to do this more often.

Warm Spinach and Rice Chicken Salad

Delicious! I used a whole bag of spinach, extra tomatoes and doubled the amount of dressing put into the rice. Will experiment with other kinds of rice and veggies.

Chicken Andouille Gumbo

WOW! It's got a kick! I used close to 3 lbs of chicken breast and a lb of shrimp. I didn't have pepper so I added in 1/4 cp cajun seasoning. I also put rice on the bottom of each bowl. It definitely makes 10 servings (medium size bowls) but three of us finished it in one setting! This was my first gumbo and I served it to 2 born and bred Louisianna men, I couldn't get a word out of them just moans. :) I followed advice and cooked the ruex for 20 minutes. It turned out great but I forgot it was hot oil so beware when you pour in the rest of the ingredients. I would definitely only serve this with honey cornbread. Anything else would overstimulate the tastebuds. My 4 year old had a small bowl of the soup part and dipped his cornbread in it for his dinner. He liked it, too!

Irish Cream Chocolate Cheesecake

This is very yummy. I put 1/2 cup of Irish Cream in the recipe. Then, I cheated. I bought a premade graham cracker crust. This recipe fills 2 of them with just a little bit of room for whip cream or .... The oreo crust tasted really good with this recipe.

Tater Tot Casserole II

I would say this is your basic recipe but plan on adding your own touches. I doubled the cheese, mixed in chopped broccoli with the tater tots, added enouch cajun spice to my liking. Sprinkled the top with bacon bits and nothing else. I didn't have mushroom soup availble so I used cream of chicken. The kids loved it.

Cranberry Meatballs

My 3 year old would only eat these meatballs last christmas eve. He was the only one who liked it because of the sauce I used. I couldn't find russian dressing so I ended up getting a bottle of sweet & sour (some unknown brand that was left on the shelf, at the grocery store, christmas eve). Next time, we're going to use a BBQ sauce. The meatballs turned out great, we're just working on the sauce.

Easiest Peanut Butter Fudge

It tasted great and the kids loved it but was not firm enough to cut squares and put onto a plate. Was quite gooey and we kept putting it back in the freezer to firm it up somemore.
