Pumpkin Pancakes

Reviewed: Mar. 31, 2012
Great pancake texture, but I screwed up and only put 1tsp of pumpkin spice instead of separate recommended seasoning. Should have been at least 2 tsp of pumpkin spice. Also, added 1/2 tsp vanilla and 1/2 tsp almond. Used buttermilk because I had leftover from another recipe and used whole can of pumpkin. I will make again, but definitely more seasoning.

Almond Squares II

Reviewed: Mar. 19, 2012
Too dry. Think it should call for less flour and less baking time. IF I make this again, I would do about 1/2 cup less flour and 5 min less baking time.

Baby Back Ribs

Reviewed: Mar. 17, 2012
Not bad, but not amazing either. I used good quality bbq sauce and even put a dry rug mixture on ribs and marinated several hours before cooking. I couldn't imagine them being any better without some sort of seasoning. They were falling off the bone like everyone else said but there wasn't an amazing flavor.

No Bake Peanut Butter Pie

Per other reviewers I didn't add the milk, used oreo crust and a tad bit more peanut butter. Strong peanut butter taste. Yummy.

Panna Cotta

Great recipe. Subbed coconut milk instead of heavy cream. Served with fresh strawberries and blueberries. Great easy and tasty dessert. Hubby said, you have to make that again.

Marie's Easy Slow Cooker Pot Roast

Reviewed: Mar. 11, 2012
Family really liked it. Seasoned chuck roast with salt, onion powder, garlic powder, mustard and a little cayenne. Seared in skillet on all sides. Placed in crock pot for 6 hours. Instead of water used chicken broth and added two bay leafs. Didn't add onion or celery because we didn't have any and we didn't miss it. Added my potatoes two hours before it was done, carrots and fresh green beans 1.5 hours before done and then handful of mushrooms 15 min before serving. Perfectly cooked and seasoned. Veggies were not mush and had great flavor. Only enough left for hubby next day and he didn't mind eating it at all.

Tomato-Cream Sauce for Pasta

Reviewed: Mar. 11, 2012
Great sauce. I halved to use up leftover angel hair pasta. I used fat free milk instead of heavy cream, 3 garlic cloves (if I did whole recipe I would have used 6 garlic cloves). I only had petite diced tomatoes so added in 1 tsp of italian seasoning, still using other seasoning as well. Like other reviewers I pureed the sauce then put back in pan with handful of mushrooms and then tossed in the left over pasta. I don't think we could ever go back to jar sauce. So tasty and so easy to make.

Neapolitan Cookies I

Reviewed: Feb. 27, 2012
They were ok. They came out looking perfect but taste wise they were ok. I didn't find them amazing in taste. For looks they would get a 5. For taste, to me like an average butter/sugar cookie.

Mini Meatloaves

Reviewed: Feb. 22, 2012
Really moist and great flavor, but I did add the onions most recommended and some garlic powder, onion powder and just a splash of worcestershire sauce. Although we liked the topping I think next time I will add just a little less sugar. Otherwise it was great and will definitely be adding to meal rotation.

Banana Sour Cream Bread

Reviewed: Feb. 22, 2012
Not bad. Really don't see it much different than the other banana bread recipe I use. I did half the recipe (used 2 eggs and 4.5 bananas) plus I added a good amount of nutmeg. Would alternate between this and my other recipe until I find the perfect one.

Best Ever Brisket

Reviewed: Feb. 9, 2012
It was just OK. I didn't add the season salt because several reviewers said it was too salty. Wish I would have added it or a little more salt because it could have used it. Did add 2 tsb ground mustard and 2 crushed bayleafs again per reviewers. Still think it is missing something. It needs something more, but not sure what that is. I actually rubbed seasoning on it night before too. Hubby and daughter ate it and honestly didn't complain, but not sure if I'd spend $20 and make that again. Sorry.

Garlic Prime Rib

Reviewed: Jan. 3, 2012
Second time I made it and I get rave reviews. Only did a 5lb rib as it was for 4 adults and that was plenty. Took about an hour at the recommended cooking temps. Cooked until it reached internal temp of 140 then lightly tented with foil and let it sit until we were ready to eat. Only wish was to get more flavor inside. But definitely produced restaraunt quality prime rib. Will make again.

Cranberry Pistachio Biscotti

Reviewed: Jan. 3, 2012
Very easy recipe. IMHO could use more flavoring so I would add an extra tsp of almond or next time would like to try anise. I unfortunately over baked and they came out a little harder than I wanted. Didn't realize they would harden as they set. I will make again but will pay more attention to the baking time. Also, used extra virgin olive oil because that is what I had. Not sure if that is equal to Light Olive Oil, but it worked. Thanks...

Parmesan Baskets

Reviewed: Dec. 1, 2011
Simple recipe. I did mine in an 8 inch non stick pan. Only recommendation I can give is don't make them so thick. I think I did mine too thick. Although it worked, formed into basket shape, they weren't crispy by the time dinner came along. I think that was because they were too thick. If I'm wrong let me know. Going to try again but next time not so thick.

Butternut Squash Soup with a Kick

Reviewed: Nov. 24, 2011
Family enjoyed this for Thanksgiving. Used only about 8 oz of evaporated milk because it was what I had (didn't want to open another can). Definitely will make again. I think next time I would add at least another 1/2 to another whole tsp of ginger. Thanks for sharing. Oh definitely needs salt so don't forget to taste.

Wow! Love it. Did half brown sugar and half white as well as half OJ and half water. Perfect. No cinnamon and would not add it either. Love this sauce. Next day it was perfect in consistency. Thanks for sharing....

Jamie's Cranberry Spinach Salad

Reviewed: Nov. 24, 2011
Great salad. Used this for our Thanksgiving dinner and it was a nice alternative to the normal salad. I toasted the sesame seeds and almonds separately in a dry pan on top of stove so didn't have to use the butter. Cut sugar down to 1/4 cup and it was plenty sweet. Also, added some crumbled feta which was a definite plus. Also, used red onion instead of white just because. Served in parmesan bowls I made. Yum!

Danish Kringle

Reviewed: Oct. 8, 2011
Very good. Originally gave it 5 stars but as I went back I couldn't get over the fact that the dough needed something. Don't get me wrong it was good just missing something. Not sure if it needed sugar, vanilla extract. Just needed something. First day I just made one of the three danishes. Did it with walnuts:Used 2 TBS softened butter, 1/3 cup brown sugar, and about 1/2 cup walnuts (sorry didn't measure the nuts just eyed it). Also added a few sprinkles of cinammon. Next day I did one with almond paste and one with cream cheese. Both fillings were very good and dough was good but still missing something. Fresh out of the oven tastes best. Next day looses it's crispness. Will make again and play wiht the dough as it was very easy to make.
