Four Egg Yellow Cake
This was my first venture into making scratch yellow cake. It was a decent first attempt. I read a bunch of reviews beforehand and made sure to cream the sugar and butter thoroughly and add the eggs one at a time mixing every time. I also used butter flavored shortening hoping to get the best of both worlds. The texture was good, light and fluffy, a tad dry, but I think I'm just used to really moist cakes. I do have to agree though, it did taste a little cornbread-y to me. While sweet, the flavor was just kind of bland, it was lacking something. A decent recipe but there has got to be better yellow cake recipes out there!

Tater Tot Casserole I
This is a delicious, fast, and very simple recipe to make! It's fun to whip up on random mornings/early afternoons and give everyone a little treat! I replaced the pork with turkey bacon, used 4 eggs instead of 2 like everyone suggested, and was extremely liberal with the cheese (around 3-4 cups)! I've used both tater tots and crispy crowns and liked the tots better, not that it makes a huge difference. I've also reheated it in the oven and it was still great, didn't dry out at all! It's even good cold. It's too bad it's so bad for you, otherwise I'd be making it a lot more!

Award Winning Soft Chocolate Chip Cookies
This recipe rocks! I tried it out a couple months ago because I'd heard of people using pudding in their cookies and I was interested to try it. Now my family constantly harasses me to make these! I usually make them once every one or two weeks! I've tried many pudding flavors but vanilla or french vanilla remain my favorite because stronger flavors like butterscotch tend to overpower the cookie, in my opinion. I mostly cut the recipe in half because the full one makes a lot of cookies and I just know people will eat even more of these! I also cut the amount of chocolate chips in half (to 1 or 1.5 cups) because I thought the chocolate to cookie ratio was a bit strong. Otherwise, I think they're perfect and haven't had to make any adjustments!
