My favorite things to cook
I love cooking and baking. My favorite thing to cook is Chicken Enchilladas because I use fresh garlic and cilantro and my homeade salsa. I love cooking for potlucks and church functions.
My favorite family cooking traditions
Pancakes for birthdays. Banana chocoalte chip muffins at least once a week. Not being scared to try a new recipe or food!
My cooking tragedies
Once I made Rhodes Rolls for Easter. You have to let them thaw at room temp for about 3 hours w/ Saran Wrap on top. We came home from church and I was in such a hurry to get lunch started that I threw the rolls in w/ the saran wrap on top still (without realizing it!) They came out very plasticy but we didn't realize what happened until we ate a few. I was so embarrassed!

Jay's Signature Pizza Crust
This is a great recipe! It is said that this recipe is comparible to pizza hut so I tried it. I have to say, it is even better than pizza hut! It isn't too greasy and there is a perfect crispness to the dough. I made it just like the recipe instructed but I think I may try it in the bread machine next. Don't forget to pre-bake the crust for about 5 minutes ahead of time. Happy baking!

Shrimp and Asparagus
This is a great meal! It has become a staple in our house. We use fresh green beans or sweet pea pods instead of asparagus. We cut the butter in half because it can get pretty greasy if you don't. And to make it easier on myself, I buy the shimp that are already peeled and deveined. I think you are a crazy person to do otherwise! But I am a mother of 4 and don't have the time or patience or stomach to do it myself. This dish is def. reccomended. It is also a great dish to serve when entertaining guests because it makes a lot!

To Die For Blueberry Muffins
The BEST muffins I've ever had! I doubled the batter to make 16. The batter was pretty thick so I thought I added too much flour but they turned out perfect! Very fluffy and moist. They were all gone the first day (I have a big family and I gave some to our church staff). Needless to say I will definetely be making these muffins again!
