Thai Grilled Chicken - Easy and Tasty!

My hubby asked for something a bit more exotic but quick and and easy!  After poring through my recipes I made this one:

Thai Grilled Chicken

4 boneless skinless chicken breasts

¼ cup soy sauce

2 teaspoons minced garlic

½ teaspoon red pepper flakes

2 tablespoons honey

1 tablespoon fresh lime juice

1.     Prepare grill for direct cooking.  Place chicken in shallow baking dish.  Combine soy sauce, garlic and pepper flakes in measuring cup.  Pour over chicken, turning to coat.  Let stand 10 minutes.

2. Meanwhile, combine honey and lime juice in small bowl until blended and set aside.

3. Place chicken on grid over medium coals, brush with marinade.  Discard remaining marinade.  Grill covered, 5 minutes.  Brush both sides of chicken with honey mixture.  Grill 5 minutes more or until chicken is no longer pink in center.

Makes 4 servings

I love how this came out!  You can substitute the oriental vegetables for any vegetable mix of your choice!  Feel free to experiment!

I don't think I would make this because me and my wife don't like sweet foods, but the picture looks very nice.

That looks great...and I love recipes that only call for simple ingredients. I'm saving this for later in the week. Thanks for sharing!

@KingSparta, its not 'sweet' at all. The honey/lime juice mixture is only used for basting. I haven't tried it without but I would imagine you certainly could.
