Valentino's Pizza Crust

Such a great pizza crust! Whole family ate it and no one left the crust behind. Husband said it tasted like a pizza from a pizzeria. I followed the recipe exactly except I did let it rise for about an hour instead of only 10 minutes--I am not sure if that makes a big difference or not. My mom and dad liked it so well, we planned a big family pizza making get together so everyone could try it. If you are looking for a nice tender crust that is not too bready, chewy, tough, or crunchy, this is the one for you!

Just right! I made the sauce portion of this recipe to go over broccoli-slaw and it was perfect--easy and tasted just how I expect coleslaw to taste.

Wiener Schnitzel

I used thinly sliced pork loin and pounded it to allow for faster cooking. This is a great recipe--we lived in Germany for a year and Schnitzel was probably our favorite dish. This turned out as well as our favorite restaurant there! A few things that have helped me as I have tried to get the frying thing right: I lightly season the meat, the flour, the eggs, and the breadcrumbs (don't over salt any of them!) so the flavor wont come off in the oil; I also put each coated slice on a wire cooling rack and allow to sit for about 30 minutes (or sit in the fridge for awhile) to avoid having the crumb coating fall off in the oil; finally, after I pull them out of the oil I put them on a [different] wire cooling rack to ensure that they stay nice and crispy and don't get soggy. I was very happy with the result. Delicious!

Quinoa with Asian Flavors

Fantastic recipe! I wish I had made more because my family ate it and were looking for seconds. I was shocked because my kids usually complain when I make Asian dishes for dinner. I added chopped broccoli and carrots for added nutrition, texture, and flavor.

Chocolate Banana Peanut Butter Shake

I did not make this shake exactly as written, but the way I did make it was wonderful. I put chocolate chips, frozen banana, peanut butter and enough milk to just cover the banana in the blender and pureed it until there were no more banana chunks. There were fine little pieces of the chocolate chips in the shake and it was nice and thick even though there was no ice. My husband said it tasted like drinking a peanut butter cup. Yummy!
