Healthy Coconut Oatmeal

I have eaten oatmeal for a long time. I also like to add raisins and brown sugar. I normally don't add the honey or yogurt. But I loved the idea of coconut. I now add the coconut to my oatmeal.

Creamed Chipped Beef On Toast

I grew up with this recipe and I have made this recipe for 20 years or better. I use a couple of TBSP shortning in a fry pan sometimes 3 and brown the chipped beef from a packet then I add flour until grease is absorbed and add milk I begin with 1 1/2 cups and bring to boil sirring constantly. As it thickens I add more milk until the gravy is as I want it to be not too thick or too thin. But I love making this it is inexpensive and very good. Salt and pepper to taste. Serve on toast or potatoes. Usually a kids favorite.

Glazed Corned Beef

I made this on St Patricks day. Since I work all day I placed in the slow cooker on low with 8 oz of water for about 9 hours. I then placed in a baking pan put the glaze as directed on top and it was wonderful. I will make this for St Patricks day every year and many times in between. Very good flavor throughout. My husband and I both agree that the outside where the glaze had been carmelized was the best part. He was disappointed that there wasn't enough left over for him to take for his lunch. I served with corn and Irish Potato Casserole.

Chicken Cordon Bleu II

I absolutely loved this recipe and my husband did too. I did alter it just a little. I marinated the chicken breast in 1/2 C. Worschester Sauce for about 1 hour. I flattened the chicken pieces I placed a little salt and pepper on each breast I then placed 2 slices of swiss cheese, 3 slices of Virginia Baked Ham (thinly sliced), and 2 slices of mozzarella cheese. I rolled it all together (I had to hold together with toothpicks) then I beat together 3 eggs and just a couple of tablespoons of milk. I got yet another bowl and put in the Italian bread crumbs I mixed the paprika with bread crumbs instead of with the flour (I don't think it makes a difference). I rolled the chicken roll in the flour, then egg mixture and then the breadcrumbs. I made the rest exactly as is. It is the best flavor in the world. As with other reviewers suggested, I did double the sauce and I'm glad I did. Absolute heaven.

'Got Some Crust' Macaroni and Cheese

I made this a few nights ago. My husband thought it was awesome. I did switch the 1/2 of the cheddar cheese with velveeta. I also sliced polish sausage and mixed with it and had some peas and carrots on the side. I will make it again.

Slow Cooker Pulled Pork

I made this for out 4th of July picnic. Everyone thought it was out of this world. I am planning on making it again for a family reunion next weekend. Very easy to make. I did substitute the pork loin for a pork butt instead because I was feeding a lot of people. Great recipe I would never have thought using root beer.
