Angel's Pasta

Excellent choice for a fast, healthy weeknight meal. I substituted 1tbsp dried Basil for the fresh and freshly grated parmesean for the mozzarella. Also used 1 can of fire-roasted diced tomatoes.

Chicken Pesto Pizza

This is and excellent, quick and easy dinner. I cut the artichoke hearts by half and chopped them before putting on the crust. Also, 1/8 to 1/4 pine nuts made a great addition.

Italian Breaded Pork Chops

Just Ok. I followed the recipe exactly. These were fine for a regular evening meal, but did not have a lot of flavor and were a bit dry. I don't make chops often, so I may give this another chance and tweak the ingredients.

Delicious Peanut Butter Cookies

Perfection. I've tried several peanut butter cookie recipes over the years and these win hands down. They were easy to make, were a huge hit at home and work, and contain a good bit less fat than other recipes.

Peppermint Brittle

Takes 10 minutes and you have something that looks like you spent hours. I've been baking a lot for the holidays and so far this is the house favorite. I used Nestle White Chocolate chips and added a little red paste food coloring.

Linguini with Broccoli and Red Peppers

This was great. I didn't have any fresh peppers, so I used 3 roasted peppers from a jar. I also added an extra clove of garlic, 1 extra tablespoon of olive oil and about 2 tablespoons of toasted pine nuts. It was a huge hit.

Easy Pasta Salad

Not a big fan of raw peppers, so while the pasta is cooking, I saute the ingredients in a little olive oil and garlic. It still ends up being an easy, light meal.

Chocolate Lovers' Favorite Cake

This absolutely melts in your mouth. Definitely not heath food, but it's very easy to make and very impressive. Made with the Satiny Chocolate Glaze, as had been suggested. I thought this was a bit much and will probably dust with powdered sugar, or use a slightly less sweet glaze next time.

Special Buttercream Frosting

I'm not sure if I did something wrong with this, or if I was just expecting something different, but I didn't care for this at all. Used butter flavored shortening as had been suggested. I just didn't think this had much flavor.

Excellent recipe. Made with homemade pasta sauce. As others have said, this is even better the next day. Will try with Ricotta next time. Great served with Cheddar Bay Biscuits.

Uncle Mac's Peanut Butter and Jelly Cookies

These were ok. The peanut butter cookie itself is great. It's simple, easy to work with and tastes good. But the jelly was a bit of a let down. Tried strawberry preserves on my first batch, which melted right through the center. Used grape jelly on my second. They looked much better, but it didn't add much to the flavor. Will leave out entirely next time around.

Apple Banana Cupcakes

Substituted yogurt for the buttermilk, since I didn't have any on hand. These bake up like a cupcake, but have a muffin consistency. And they have the best flavor of any banana bread recipe I've ever tasted.
