Pumpkin Fudge

This did not set for me. I followed the recipe and did not change a thing. The only difference I can see is that unlike other ppl I did not use a candy thermometer. Maybe it just didn't get hot enough? It does turn unto a pumpkin caramel and might be good for dipping apples.

Blueberry Sour Cream Coffee Cake

I decreased the sugar to 1.5 cups and increased the blueberries. Made it today for the 4th of July and no one could wait until after dinner! Will make again!

Easy Garlic Broiled Chicken

Very easy weekday meal. I used light soy sauce. I turned and basted every 5 minutes and juices ran clear @ approx. 18 min. Kids loved it, no complaints of it being spicy!

Skillet Tacos

Slow Cooker Guisado Verde

This turned out wonderful! I made it with two pounds of fresh tomatillos that I cooked down with 1.5 cups for water, garlic, salt and cilantro. I served it more like a caldo with corn tortillas in the bottom of a soup bowl. I did serve the caldo with a dollop of sour cream and the cheese! I also only used 1 jalapeno so kids would tolerate it! Will make again!

Best Ever Crab Cakes

So good. I made two batches. I used one and a half 6 oz. cans of crab and 3/4 cup crackers per batch. I served it with roasted asparagus and wild rice. Will make again!

Savory Slow Cooker Squash and Apple Dish

I made this today for Thxgiving Dinner. The apples were mushy by 3 hours on high. I plan to cook the squash/ cranberries for a good hour and a half prior to adding the apples next time I make it. I added 2 tbsp of honey and found the taste pleasantly sweet. And yes the onions were omitted.

Johnsonville® Italian Sausage Lasagna

This was an absolute hit with the family! Only a few changes were made on my part. I used 2 cups ricotta and 2 cups low fat cottage cheese. I also used frozen spinach, thawed instead of fresh. Time consuming but worth it, as there will be left overs.

Alaska Salmon Bake with Pecan Crunch Coating

Angel Hair Pasta with Shrimp and Basil

I followed this recipe with only one exception. I used 1.5 lb shrimp. The dish is fresh and light and worked nicely with whole wheat pasta. The kids won't beg for this but they'll eat and not complain!

Emma's Clam Chowder

This Clam Chowder is labor intensive. The grated carrot and chopping of the veggies takes me longer than 20 minutes to prep, but maybe I'm just slow. The end result is heaven. I serve mine with fresh Ciabatta Bread, kiddos are always pleased! ***Most importantly it's dairy free!

Picky girls did eat! This was my 1st attempt at turnips and it was a hit with the family. I substituted cilantro for the parsley! YUM!
