Thighs on Rice
This was very easy, which I liked, and all the ingredients are usually in my cupboards. However, the chicken had absolutely no flavor at all. I think next time I will marinate them for an hour or so before baking them. Maybe that would help? I used brown rice and that was delicious, however, I added minced garlic and 1/4 cup lemon juice to the mixture. My thighs were quite large, so I ended up baking them for 50 minutes at 400 degrees. I would use this again because it is so simple and easy to throw together, but need to do something about the flavorless chicken.

Tuscan Soup
This was really good! I don't normally like this kind of soup, or sausage for that matter. It was picked for my cooking club as the item I was to make. It surprised me how good it was. I followed the recipe exactly, except I couldn't find spicy sausage, so had to get mild. It was enough flavor for all 6 of us in the club and definitely will be a keeper. Thanks.

Knefla Soup II
This was pretty good, but the dough for the dumplings was definitely very runny. Another reviewer mentioned starting with half the liquid it calls for and then go up from there. I agree. I had to add quite a bit of flour to the dumpling dough before it got to a stage where I could actually form it and cut it into pieces. Other than that, it is a very good and easy recipe without a lot of ingredients. I saved a little of the water after boiling the dumplings and potatoes to see if it would add some flavor and I also added a few instant chicken bouillon cubes at the end because it tasted a little bland. All in all, a wonderful recipe. Even better the next day! Thanks for sharing.
