Green Chili and Cheese Chicken

We loved this recipe, soooo much flavor yet so simple. We used boneless/skinless chicken thighs and because we're lazy we just baked the seasoned thighs with the chiles spread on top and then threw the cheese on top for the last 10 minutes of baking. We are eating this once a week now!

Brown Sugar Smokies

This recipes is NO JOKE! I thought how could something so simple be as good as everyone is says, but I was wrong. IT IS! I made them for my daughters' birthday party and we set a few aside for some family that got lost and were should have SEEN everyone circling them joking about who would get them if the latecomers never made it! LOL! One pound of bacon was PERFECT for 1 package of smokies. I used CHEAP bacon, used no toothpicks/skewers, ROLLED them in brown sugar (as was suggested by another reviewer) once they were put together instead of sprinkling and then baked them on a cooling rack on top of a baking sheet with foil to catch the fat. I did have to bake them about 13 minutes longer to get them crisp. DELICIOUS!

Great recipe, everyone loved it, but will add more Thousand Island Dressing to add to the flavor, especially as it sits in the crock pot for a while! YUMMY

Hot Raspberry Spread

I am sorry it has taken me so long to review this recipe considering how many times I have made this! We love this dip! I can't handle things too spicy but even I use a "medium" salsa (hard to find picante here) b/c the cream cheese chills it out so much. This sweet hot flavor is just wonderful and it is so pretty! I love the idea the previous poster had about using peach preserves...that would be great for Halloween and Thanksgiving! I will have to try that too!

Chicken With Portobello Mushrooms and Artichokes

Had to modify this recipe to make it fit Weight Watchers Core program. Instead of flour, I used seasoned cream of wheat (added poultry seasoning and lemon pepper along with the salt and pepper). Also, I doubled the broth and cut out the brandy. I will pound out the chicken breasts even more next time and maybe add klamata olives with the artichokes. The coating turned out very crunchy and beautifully brown on the chicken. Love the brothy sauce this dish creates! I served it over couscous so that the wonderful sauce could soak in. YUM!

Green Olive Chicken I

I should have believed the first review about it not being too salty! In fact...I will use the whole jar of olives AND all the brine next time (to be fair, we are HUGE olive fans). The potatoes really negate the it can take the extra olives! Great flavor. Made it with boneless, skinless chicken thighs. VERY tender! PS: The carrots were a great idea too!

Easy Minute Steaks

I really wanted to try this tonight, but I didn't have cube steaks on hand. What I had were "thinly sliced top round steak"....they sort of looked like thick "steak-ums". I seasoned the steaks with garlic pepper seasoning and quickly browned them in a skillet before putting them in a shallow casserole with the soup, a can of mushrooms (w/ their juice) and some water mixed with 2 teaspoons of corn starch. It is cooling on our stove top right now and it smells and tastes WONDERFUL!!!

Black Bean Salsa

I used regular canned corn and all regular canned tomatoes...I just add extra seasoning (including garlic and some salt!). Everyone raves and eats it all up! I love the leftovers heated up with plain rice....YUMMY!!!

Slow Cooker Macaroni and Cheese I

I have made this several times and modified it to how we like it. We leave the eggs out entirely, so it turns out creamy, not "set up" like custard. I used only 3 cups of cheese (it was PLENTY!), used skim milk and added garlic powder and green pepper hot sauce. Everyone at work loved it!!!

Reese's® Peanut Butter and Milk Chocolate Chip Crescents

I made this one night when the girls were coming over. I wrapped broken reese's cups in the crescents before baking, then sprinkled with powered sugar once they were cool. They were the first thing gone!

Beefy Spanish Rice

I added a can of diced tomatoes with some of the juice drained out, an entire can of corn (instead of one cup), ground cumin, chili powder, and replaced the pepper and onion with a bag of frozen peppers and onions...I made it to the point of throwing it all together and then put it all in a crock-pot on high for several hours until the rice was tender....tasted like a stuffed pepper casserole. YUM! Very easy to change ingredients to whatever you have on hand or like. Stayed VERY MOIST in the crock-pot. I can hardly wait until tomorrow since Donna L. says it is even better the next day!
