Chicken Breasts Stuffed with Perfection

I liked it a lot, my husband didn't. He's not terribly picky, but he said there were just "too many things" in it. I used the exact ingredients called for, but did use a little different technique...just to keep it simpler. I only marinated my chicken for about an hour, pounded quite thin. I cooked the garlic, spinach and green onions in olive oil, then sautéed the mushrooms. I did let the mixture cool a bit before adding it to the feta and sour cream mixture, then just put the bowl into the freezer for a few minutes. There is absolutely no need for the cookie sheet. I also didn't use toothpicks, just rolled the breasts around the filling and laid them in the baking dish. I used homemade breadcrumbs with Parm. In all, it's a dish I enjoyed, but with the lukewarm reception from my husband, I probably won't do it often.

Spicy Honey Mustard Sausage Wraps

I loved these...simple, yet a bit different than the typical "pigs in a blanket." They were perfect for our Super Bowl supper and the leftovers were good for breakfast. Tasty stuff!!

Spinach Artichoke Hummus with Roasted Red Peppers

I just finished making this and now it's chilling, but so far, this is wonderful. I cooked my own garbanzos from dried...used about 2 1/2 cups cooked. I am not adding the red peppers because we don't like them. This came together easily, but isn't as garlicky as I expected...that might change after it sits a while. BUT...even so, it's beautiful...such a great green color and creamy and very, very good. Will make often.

Crustless Cheese Quiche

Loved it...I added three kinds of cheese and sausage instead of bacon, but I don't think that changes the overall integrity of the dish. I think you can cut the butter and still get a good product. Mine wasn't overly greasy as mentioned in other reviews, but I think I will reduce the butter anyway. I cut this and wrapped in individual servings to eat and eat for breakfast this week. Will definitely make again.

Simple Roasted Chickpea Snack

Like the flavor, but I had a really hard time getting them to that "just right" stage of crunchy without being either hard as a rock or sort of rubbery instead of crunchy. After the suggested cooking time, some were good and some weren't and I didn't feel like picking them out of the batch as they hit that "just right" stage. I won't make this again...I'll just enjoy garbanzos in other ways.

Muffin Frittatas

Not sure why, but these fell flat as they cooled. The taste was fine and I followed the recipe, (except for different veggies, which shouldn't change the outcome) so the whole flattening thing was really weird. They are good for reheating for quick breakfasts, so I do appreciate that.

Hot German Potato Salad III

I'd never had hot potato salad, so I was hoping this would be a big hit. It was ok...easy enough to make and the sauce (dressing?) had a decent flavor, but I didn't really like it. There are lots and lots of potato recipes I prefer, so we probably won't make this again.

Famous Pork Chops

These were ok...I cut back on the butter...half a stick is just way too much for four pork chops. I also halved the salt. They were tender, but really didn't have a lot of flavor. Not sure if I'll make these again...

Simple Scones

Simple can often be the best. These are beyond simple when you use a food processor, pulsing ONLY until butter is incorporated...I just cut frozen butter rather than grating. Then I added dried blueberries and the egg and sour cream (fat free) and pulsed a few more times and the dough comes together in seconds. I also added some orange zest...my husband ate three already. Definitely deserving of five stars...try these!

Chicken Enchilada Soup I

Very good, but I think it needed some tweaks to make it 5 stars. Ten tortillas is too many for the amount of liquid...I cut it to 8 and still needed to add more broth. Granted, it gave me more soup, but it was also a bit bland since I didn't have more enchilada sauce to match the amount of broth. I used fat free half-and-half just to cut calories and obviously fat! Next time I'll do 4 or 5 tortillas and maybe a bit of cayenne...and I'll definitely make it again.

Rotisserie Style Slow Cooker Chicken

Very good! I used bone-in breasts, as we don't like dark meat. I didn't remove the skin (just forgot) and will DEFINITELY do that next time...picking it out of the finished product was ick. I followed the measurements closely and just put the onion and garlic in the bottom of the crock and piled the rubbed chicken on top. Tender, juicy and tasty...haven't decided how I'm going to use the leftovers yet, but they will be yummy, I'm sure! Thanks for a good personal recipe!!

Mom's Incredible Spinach Gratin

LOVED this!! I used fresh spinach instead of frozen...just chopped it up a bit and added it to the cream sauce. I also used fresh nutmeg and probably added bit more Gruyere than called for, because it's my favorite cheese. It's a treat I won't let myself have too often, but wow is it good!! Thanks for a lovely, lovely dish.

Crab and Swiss Quiche

I like all of the ingredients in this dish, love quiche...so I expected this would be a big hit for me and was planning on having it for leftover lunches all week. The only change I made was to add some chopped green onions, but I was highly disappointed. It was a weird texture and the taste was extremely artificial to me. I am going to try one more piece later today, but I am afraid I'm going to have to toss the whole thing. :-(

Pork Chalupas

I couldn't find pork shoulder roast, so I used ribs and it worked wonderfully, just had to pick out the bones. I soaked my beans overnight and didn't bother with mixing the beans, peppers and spices (btw, I only added ONE TEASPOON of salt and that was plenty) in a separate bowl...it's a total waste of a bowl! I mixed it in the slow cooker, added the ribs, and covered with a mix of water and chicken broth. The mixture was tender and tasty, with just the right amount of kick. I served them with lettuce, tomato, radishes, cheddar cheese and flour tortillas, passing salsa on the side. It made enough for an army...plenty to freeze for several more meals. Very nice recipe!

Grandma's Chicken Chardon

I found this recipe to be exceptionally good and easy, which is always a plus in my book. I love to cook, but I'd prefer not to be in the kitchen all night to make a good weeknight meal. I cut the serving size down to two breasts and I butterflied those, so they cooked much quicker than the 45 minutes recommended in the recipe. Other than that, I stayed true to the recipe. I bet you could cut the butter a bit and still have great taste. Will definitely be making this again.

Be careful when you make these...the picture shows chocolate cupcakes, right side up, but the recipe calls for white cake mix and upside down cupcakes. Very confusing. :-(

Vegetarian Chickpea Sandwich Filling

Delicious!!! I used low-fat mayo and green onion rather than regular onion. I also added more dill because I love it. It's a little high in carbs (I'm diabetic), but the fiber helps make up for that. Just ate it with some crackers and it was a super-quick and tasty lunch...definitely a keeper!
