Fruity Fun Skewers

Cheesy Green Chile Cheese Burgers

These were good...I cooked them inside as the directions stated, but next time I'll grill them. There was also WAY too much topping for four burgers...there's no way all of mine would fit on four patties. The taste was great, but I think next time I'll also add a spicer pepper...the green chilies are awfully mild. Thanks for sharing your recipe!

Mexican Zucchini Cheese Soup

Yum!! This is one of those simple soups that is easily adaptable to changes/enhancements. I used Rotel instead of stewed tomatoes and spicy Velveeta. I don't buy canned vegetables, but I had a leftover ear of corn, so I cut that off the cob and used it. The heat was just perfect to me!

Monterey Chicken with Potatoes

I liked this a lot...in fact, I changed my supper plans for tonight when I saw the recipe on the Buzz. I made it *almost* exactly, except I used fingerling potatoes and cooked them with a mix of bueer and olive oil at 425, then dropped the temp to 375 when added the chicken and finished cooking. I also salted everything when I added the lime and butter (cut drastically). My chicken was butterflied, so it only took about 15 minutes to cook before I added the salsa/cheese/cilantro mixture. I'll definitely make this again and I'm using the leftover potatoes (chicken is all gone) with eggs to make breakfast burritos. Thanks for a recipe that really sings!

Unwrapping all those kisses is a pain, but otherwise, this is simple and cute. They're going in a care package for my college-agedson...I'm sure they'll be a hit!

Grilled Onion Blossom

LOVE this! It was quick and easy and totally sweet and delicious. (in fact, it was *super* quick...it was done in about 30 minutes on my grill, not 45, so check yours before the time is up!) I made it exactly as the recipe stated, but I like that it could be easily customized with different herbs or spices. I took a suggestion from another reviewer and cut my onion in a soup ladle to keep from slicing through the whole thing...it worked perfectly! I'm looking forward to doing this one again....thanks for a great recipe.

Refried Beans Without the Refry

I halved the amount of beans and water, but didn't change anything else. They weren't spicy at all and I think I'll increase the spices/seasonings next time. It also took *very* little of the cooking water to get them very creamy. Good stuff and I've got enough to eat a lot and freeze that much more.

Lime Chicken Soft Tacos

Very tasty sauce for chicken tacos. I used chicken I'd cooked the day before and just heated it up in the sauce/marinade. Next time, I'll double it, just to get more flavor.

King's Seasoned Salt

I love this! I am out of thyme...have lots of fresh, but no dried, but even without it, it's great. The smoked paprika is the key, I think. Next time I shop, I'll pick up some dried thyme and add it to the mix.

Jim's Cheddar Onion Soda Bread

The flavor is great, but user error prevented this from being superb for us. As an inexperienced bread maker, I misread the ingredients. I saw "bread flour" and thought, "Oh, I've got that." I actually had CAKE flour...the only other flour I had was white whole wheat flour, so I used that. After 30 minutes, it was still raw in the middle, so I cooked it about 10 more minutes and we ate the outsides of it with supper. I think they would have cooked better as biscuits and I'll try that next time, along with the correct flour.

Balsamic Green Beans

The first words out of my husband's mouth when he tasted these were, "These have a great flavor! Not like regular green beans." he generally doesn't like them at all, but I was craving some, so I tried these. They were great...I had some leftover bacon from another meal, so I just added that after I sautéed the onion and garlic, then added the beans and balsamic. I cut down the balsamic to about 1/3 cup and it didn't take nearly as long as the times indicated to get them perfectly good. Very, very good!

Mexican Tinga

Yummy! I'm a wimp and couldn't handle a whole can of chiptole in adobo, so I only used about half. This is tasty stuff...I'll definitely make it again. *EDIT: I've made this over and over and over now...it's one of my favorite AR recipes ever...love the tingle of chiptole! My favorite way to eat this is in a flour tortilla with some sour cream, but I'm sure the tostada way is great too. I've read some reviews that say it's not authentic, but even if it's not, I don't give a rip...it TASTES great!

Baked Asparagus with Balsamic Butter Sauce

We didn't care for this sauce at all...I was a little concerned about so much more soy than balsamic vinegar and I was right...the soy overwhelmed the balsamic. Sorry, won't be making this again.

Fish Tacos

I only made the white sauce for these, I prefer to broil my fish for fish tacos. The white sauce is very good for fish tacos, though...I made it exactly as the recipe. Yummy, although it made waaaaay too much for us.

Biscuit Baking Mix

Made half a batch because even though you can freeze it, there are only two of us and I don't often make things that require baking mix. It was simple...threw it together in about 5 minutes and now I've got enough for several months of cooking. And because I made it with pantry staples that I always have on hand for baking, it *feels* like it didn't cost a thing!

Broiled Tilapia Parmesan

This dish is highly popular on the AR buzz, but I don't get the hype. It's fine, but nothing especially intriguing or interesting. I actually prefer just simply broiled fish with a splash of lemon juice.

Garlic Parmesan Orzo

So horribly bad for me, but I couldn't resist making it. It was simple and easy. I think it was too much butter actually and that it would have tasted better and less greasy with about half the amount. Again, not something I'd make often, but would be good for company. Served it with Chicken Breasts Stuffed with Perfection, also from AR.
