Jalapeno Chicken II

I think the flavor in this is amazing, but I think the method could be MUCH easier. I butterflied my chicken breasts until they were open, but not cut completely apart and roasted my peppers first, then spread cream cheese on the breast, added the roasted peppers and closed them back up. So much easier than rolling them around peppers. I added turkey bacon, but probably won't bother with it next time...the true flavor was in the chicken and peppers and cheese. However, if you're a big bacon fan (we're not) you probably won't want to skip that step. I didn't have any issues with my cream cheese leaking and I didn't use toothpicks at all. Again, the flavor here is 5-star, but the method leaves a lot to be desired.

Jan's Pretzel Dogs

It's much easier to make pretzels than l ever knew. These were great...based on a lot of the reviews, I reduced the salt in the dough and used it pretty sparingly on top with the egg wash. I only used half the dough and froze the rest for another time.

Amazing 'Pizza' Pork Chops

These were good, quick and easy for a weeknight meal. I can't find decent tomatoes around here...wish I'd had a more flavorful one, but the oregano and basil from my herb garden were great. I cooked them in the oven because I was too lazy to go out to the grill, but we'll have these again.

Chicken Parmesan Bundles

Very good...I did change a few things, used fresh spinach, seasoned with onion and garlic, used bread crumbs instead of crackers. Cooked up quickly and I didn't bother with the toothpicks. Served it with my own homemade sauce over whole grain pasta.

Easy Chicken Satay

This was just ok...despite the number of ingredients in the sauce, it just didn't have a lot of taste...was sort of one note and even additional lime juice didn't cut the richness of the peanut butter. My daughter much preferred a different satay recipe that we tried last week, so we'll stick with that.

Nana's Favorite Fruit Cobbler

I only used peaches for this...they were perfectly ripe and sweet, so I cut back to 1/8 cup of brown sugar and 1/2 cup white for the topping. I think next time I'll probably leave out the oil and cut the butter into the topping, just because it doesn't seem you need both butter and oil. That said, this went over very well with my husband, who ate two bowls with a little cream drizzled over it before he went to bed tonight. I'm sure it will be gone tomorrow.

Wendie's Orange-Ginger Chicken

This chicken is easy to prep and execute. The marinade is put together with ingredients we almost always have on hand (had to buy the preserves) and comes together in moments. I marinated the chicken for about six hours, using bone-in breasts and grilled them on low heat. They looked gorgeous! The flavors were just a bit bland for us, though. I think this recipe could benefit from some salt and pepper and perhaps red pepper flakes or sriracha to make it really pop. We served it with rice and grilled zucchini. Thanks for sharing your recipe, Wendie!

Queenie's Killer Tomato Bagel Sandwich

This is more like a method than a recipe, but the original is very good. Looking forward to adding dill instead of basil, maybe some cucumber, smoked salmon or even an egg...the possibilities are many! Also, bagel thins instead of a bagel make this more carb-friendly for those of us who need that.

Tex-Mex Patty Melts

The burger part of these is definitely five-star and I'm basing my review on that, not my changes. I didn't measure the beer, so probably used a bit more than 1/2 an ounce. They were spicy without being ridiculous and left a nice tingle in my mouth. I didn't add quite as much pepper to the mayo, but it was great. I changed everything else, but it was all super great. I used American cheese because I like the way it melts...I grilled the burgers and used sandwich thins instead of bread. Can't wait to eat the one we had leftover!

Thai-Style Peanut Sauce with Honey

Very simple, very easy and better than any other peanut sauce I've tried. I'm not a huge fan, but my daughter LOVES it, so this was for her. Great on chicken satay over rice. Thanks for a perfect recipe for a quick peanut sauce!

Chipotle Chicken Salad

Used goat cheese because my feta was flavored with basil and tomato and I didn't think I'd like that combo. This was delicious! I love chipotle anyway and the combination with the creamy cheeses was great and made a tasty sandwich!

Roast Sticky Chicken-Rotisserie Style

I love the seasoning...doesn't taste exactly like the rotissiere seasoning from our grocery store, but it's close and very tasty! I just used bone-in breasts, so I stuffed onion under the skin and cooked for about 1 hour, 45 minutes to 180. Some of the outer edges were a bit dry, but it was mostly yummy tender moist chicken. I've used it for several different recipes this week and have two seasoned breasts in the freezer to use another week. Definitely a keepr of a recipe.

Spinach Salad with Pistachio Chicken

Loved this salad! I left out the bell pepper because we don't like it, and I made my own vinaigrette, but didn't change anything else. Very good, simple to make and quite filling. Will definitely be on our summer rotation. Thanks for sharing!

Honey Balsamic Vinaigrette Dressing

Very good...it was a touch bland when first mixed up, but after sitting for a while, it was quite nice on our salads. Doesn't separate either, which is a bonus. Will definitely make again.

Mother-In-Law Eggs

I like deviled eggs, but honestly, I can't tell much difference between any recipe I try, so I must not have a very discerning egg palate! Nevertheless, these are great and went over very well at our July 4th lunch.

Japanese Zucchini and Onions

I left out the soy...didn't seem to need it with the teriyaki...but everything else was the same. Simple, and very tasty. Will definitely make this again...it's a perfect side for almost any Asian dish.
