Sombrero Chicken

I changed this up so much that I'm actually going to write a custom recipe for it, but I think this recipes deserves five stars for the flavor alone. I didn't add the bacon, but we don't like it and I'm sure using it would have *lowered* the rating for us. Thanks for a recipe I found perfect for customization.

Fruit Salad Dressing

Very good dressing! I only added a teaspoon of sugar and used lime instead of lemon. Makes plenty...more than I needed, so I'm going to buy more fruit for the rest.

Caramelized Chicken with Jalapeno Cream Sauce

The sauce is the star in this recipe...caramelized chicken breasts aren't anything special, but the sauce is very good. I made it following the recipe exactly and didn't find it hot at all, but it had fresh kick. Served with brown rice and pinto beans. There was way too much sauce for us, but others may like a ton of sauce.

Garlic Chicken

I like this idea a lot. It's very quick and easy and turns out a tender chicken. However, I let my garlic steep in the oil for a long time, and just didn't really get a garlicky flavor. Next time I'll double or triple the garlic.

Spinach Cheddar Potatoes Au Gratin

This recipe needs a lot of modifications to be well-done. The microwave, while certainly a time-saver, doesn't cook the potatoes to that slightly-crunchy-on-top goodness that makes a gratin special. I also felt like the sauce could use some freshly-grated nutmeg to make it truly special. Next time, I'll just do my gratin the usual way, but add some quickly sautéed spinach and a sprinkling of nutmeg.

Chicken Chimichangas with Sour Cream Sauce

VERY good...only changes were to use chicken stock instead of water and bullion. I also baked instead of frying and didn't bother with toothpicks...if you wrap the tortillas carefully and well, the toothpicks aren't necessary and they are a pain to remove!! Topped these with the sauce and shredded lettuce and tomato. Great recipe.

Thai Quivering Tenderloins

The name of this recipe is horrible, but the flavor is great and we loved the tenderloin. I didn't change a thing. Will definitely make again...served with brown jasmine rice and green beans sautéed in a teriyaki sauce.

Pumpkin Snickerdoodles

I made these for a work potluck and had three requests for the recipe before school even started! I used 1/2 AP flour and 1/2 bread flour and used butter instead of shortening because that's what I had on hand. They were simple and delicious and totally light and airy. I put the dough in the fridge for about 30 minutes and used a small scoop and they weren't sticky at all. Definitely will make these again. Thanks for a great recipe!

Clone of a Cinnabon (for Yada)

Really very, very easy. I was lazy and just mixed the cinnamon, sugar and butter together before spreading it on the dough and cutting. Made these up the night before, stored in the fridge and baked off the next morning. Everyone loved them.

Pizza Pinwheels

For simplicity's sake, I spread the pizza sauce on the crescent rolls before I added the pepperoni and cheese. These were simple and tasted good, but they didn't go as fast as other appetizers served at the same time.

Sausage Stuffed Jalapenos

These are so, so, so good. I could have eaten the entire batch myself. I chilled the filling after I mixed it to make filling them easier. These were eaten more quickly than any other appetizer I've ever made.

Margarita Cake with Key Lime Cream Cheese Frosting

The cake was fluffy and moist, but it didn't have the "bite" of margarita, which I found disappointing. Not sure what to add to give it that...these were just citrus cupcakes in my mind. However, my husband asked for them again after he polished off the first batch, so it gets four stars instead of three. Edit: I just remade these and added tequila to the frosting. MUCH better...now they actually taste like a margarita.

Hot Mexican Spinach Dip

I loved this and the dish was scraped clean at our Mexican potluck luncheon this week. I used fresh spinach, but kept everything else the same. By the time it was cooked through and very bubbly, my cream cheese still wasn't thoroughly melted, but I stirred it a while and it was fine. I cooked the night before, kept in the fridge and it heated up quickly in the microwave at work. I might try it next time in a crock pot.

Baked Paprika-Parmesan Chicken

I cut the butter in half, didn't use egg and used smoked paprika. I also butterflied the chicken breasts. Very good, I didn't find it bland as many reviewers did. In fact, I thought it was great. Definitely a quick and easy dish you can have on the table in nothing flat.

Broccoli with Garlic Butter and Cashews

This was better than I actually expected...I usually just like my side dishes plain, but sometimes I feel the need to change it up. I made this per the recipe, but next time might cut back a bit on the butter and reduce it a little longer. It made a nice sauce to put not only on the broccoli, but also on our teriyaki tenderloin and brown rice. Will make again.

Pork Medallions with Balsamic Vinegar and Capers

Yummy...this was simple and delicious. The measurements were perfect, the sauce reduced nicely and the flavors were well-balanced. I didn't use garlic salt, just garlic and I flattened the medallions just a bit before I dredged and cooked it. AND...I had this done and waiting before my asparagus finished roasting! Also served with mashed potatoes. Thanks for a great recipe, Marianne.
